Ingredients

  • Cauliflower - 300 grams

  • Butter - 1 tablespoon
  • Garlic - 2 cloves, minced
  • Lemon juice - 1 tablespoon
  • Parsley - 2 tablespoons, chopped
  • Salt - to taste
  • Black pepper - to taste

Steps

  1. Preheat the oven to 200°C (390°F).
  2. Clean the anchovies by removing the heads and guts, then rinse them under cold water and pat dry.
  3. In a large pot, steam the cauliflower florets until tender, about 10-12 minutes.
  4. In a skillet over medium heat, add olive oil and sauté the minced garlic until fragrant, about 1 minute.
  5. Add the steamed cauliflower to the skillet, along with butter, lemon juice, salt, and pepper. Mash the cauliflower until smooth and creamy.
  6. Arrange the cleaned anchovies on a baking sheet lined with parchment paper, drizzle with olive oil, and season with salt and black pepper.
  7. Bake the anchovies in the preheated oven for 15-20 minutes, or until they are cooked through and slightly crispy.
  8. Serve the baked anchovies over the cauliflower mash, garnished with chopped parsley.
