Ingredients

  • Cauliflower - 400 grams
  • Egg - 1 large
  • Mozzarella cheese - 150 grams, shredded
  • Parmesan cheese - 50 grams, grated
  • Olives (green and black) - 100 grams, sliced
  • Olive oil - 2 tablespoons
  • Dried oregano - 1 teaspoon
  • Garlic powder - 1 teaspoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Cherry tomatoes - 100 grams, halved
  • Fresh basil - a handful, chopped (for garnish)

Steps

  1. Preheat your oven to 220°C (428°F).
  2. Rinse and chop the cauliflower into florets, then steam it until tender, about 10 minutes.
  3. Drain the cauliflower well and let it cool slightly, then use a clean kitchen towel to squeeze out excess moisture.
  4. In a mixing bowl, combine the steamed cauliflower, egg, half of the mozzarella cheese, Parmesan cheese, oregano, garlic powder, salt, and black pepper. Mix thoroughly until a dough-like consistency forms.
  5. Line a baking tray with parchment paper and spread the cauliflower mixture into a round pizza shape, about 1 cm thick.
  6. Bake in the preheated oven for 20 minutes or until golden brown and firm.
  7. Remove the crust from the oven and drizzle with olive oil. Top with the remaining mozzarella cheese, sliced olives, and cherry tomatoes.
  8. Return to the oven and bake for an additional 10 minutes, or until the cheese is melted and bubbly.
  9. Once cooked, remove from the oven and garnish with fresh basil before slicing and serving.
