- Cauliflower - 400 grams
- Egg - 1 large
- Mozzarella cheese - 150 grams, shredded
- Parmesan cheese - 50 grams, grated
- Olives (green and black) - 100 grams, sliced
- Olive oil - 2 tablespoons
- Dried oregano - 1 teaspoon
- Garlic powder - 1 teaspoon
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Cherry tomatoes - 100 grams, halved
- Fresh basil - a handful, chopped (for garnish)
Steps
- Preheat your oven to 220°C (428°F).
- Rinse and chop the cauliflower into florets, then steam it until tender, about 10 minutes.
- Drain the cauliflower well and let it cool slightly, then use a clean kitchen towel to squeeze out excess moisture.
- In a mixing bowl, combine the steamed cauliflower, egg, half of the mozzarella cheese, Parmesan cheese, oregano, garlic powder, salt, and black pepper. Mix thoroughly until a dough-like consistency forms.
- Line a baking tray with parchment paper and spread the cauliflower mixture into a round pizza shape, about 1 cm thick.
- Bake in the preheated oven for 20 minutes or until golden brown and firm.
- Remove the crust from the oven and drizzle with olive oil. Top with the remaining mozzarella cheese, sliced olives, and cherry tomatoes.
- Return to the oven and bake for an additional 10 minutes, or until the cheese is melted and bubbly.
- Once cooked, remove from the oven and garnish with fresh basil before slicing and serving.
