- large potatoes - 2
- green olives, pitted and chopped - 100 grams
- black olives, pitted and chopped - 100 grams
- olive oil - 2 tablespoons
- feta cheese, crumbled - 100 grams
- red onion, finely chopped - 1 small
- bell pepper, diced - 1 medium
- cherry tomatoes, halved - 100 grams
- fresh parsley, chopped - 2 tablespoons
- salt - to taste
- black pepper - to taste
- oregano - 1 teaspoon
Steps
- Preheat the oven to 200°C (400°F).
- Wash the potatoes thoroughly and prick them several times with a fork.
- Wrap each potato in aluminum foil and bake in the preheated oven for 45-50 minutes, or until tender.
- While the potatoes are baking, prepare the topping by mixing the chopped green and black olives, feta cheese, red onion, bell pepper, cherry tomatoes, parsley, olive oil, oregano, salt, and black pepper in a bowl.
- Once the potatoes are cooked, remove them from the oven and carefully unwrap them.
- Cut a slit down the center of each potato and gently fluff the insides with a fork.
- Spoon the olive and vegetable mixture generously into each potato, allowing it to overflow.
- Return the stuffed potatoes to the oven for an additional 5-10 minutes to warm the topping.
- Serve hot, garnished with extra parsley if desired.
