Ingredients

  • Large Russet potatoes - 2
  • Olive oil - 2 tablespoons
  • Sea salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Paprika - 1/2 teaspoon
  • Red bell pepper - 1/2 cup, diced
  • Cucumber - 1/2 cup, diced
  • Cherry tomatoes - 1/2 cup, halved
  • Red onion - 1/4 cup, finely chopped
  • Fresh parsley - 2 tablespoons, chopped
  • Lemon juice - 1 tablespoon
  • Vegan yogurt - 1/4 cup (optional)
  • Chili flakes - to taste (optional)

Steps

  1. Preheat the oven to 200°C (400°F).
  2. Wash the russet potatoes thoroughly and pierce them several times with a fork.
  3. Rub the potatoes with olive oil and sprinkle sea salt evenly over them.
  4. Place the potatoes directly on the oven rack and bake for 45-50 minutes, or until tender when pierced with a fork.
  5. While the potatoes are baking, prepare the vegetable filling by combining the diced red bell pepper, cucumber, cherry tomatoes, red onion, and parsley in a bowl.
  6. Drizzle the vegetable mixture with lemon juice, and season with black pepper, paprika, and chili flakes if desired. Mix well.
  7. Once the potatoes are done, remove them from the oven and let them cool slightly.
  8. Cut a slit down the center of each potato and gently fluff the insides with a fork.
  9. Stuff each potato with the vegetable mixture, adding a dollop of vegan yogurt on top if using.
