- Large Russet potatoes - 2
- Olive oil - 2 tablespoons
- Sea salt - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Paprika - 1/2 teaspoon
- Red bell pepper - 1/2 cup, diced
- Cucumber - 1/2 cup, diced
- Cherry tomatoes - 1/2 cup, halved
- Red onion - 1/4 cup, finely chopped
- Fresh parsley - 2 tablespoons, chopped
- Lemon juice - 1 tablespoon
- Vegan yogurt - 1/4 cup (optional)
- Chili flakes - to taste (optional)
Steps
- Preheat the oven to 200°C (400°F).
- Wash the russet potatoes thoroughly and pierce them several times with a fork.
- Rub the potatoes with olive oil and sprinkle sea salt evenly over them.
- Place the potatoes directly on the oven rack and bake for 45-50 minutes, or until tender when pierced with a fork.
- While the potatoes are baking, prepare the vegetable filling by combining the diced red bell pepper, cucumber, cherry tomatoes, red onion, and parsley in a bowl.
- Drizzle the vegetable mixture with lemon juice, and season with black pepper, paprika, and chili flakes if desired. Mix well.
- Once the potatoes are done, remove them from the oven and let them cool slightly.
- Cut a slit down the center of each potato and gently fluff the insides with a fork.
- Stuff each potato with the vegetable mixture, adding a dollop of vegan yogurt on top if using.
- Serve immediately and enjoy your delicious kumpir with veggies!
