Ingredients

  • Large Russet potatoes - 2
  • Olive oil - 2 tablespoons
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Red bell pepper - 1/2, diced
  • Zucchini - 1 small, diced
  • Carrot - 1 medium, grated
  • Corn - 1/2 cup (canned or frozen)
  • Green peas - 1/2 cup (canned or frozen)
  • Chickpeas - 1/2 cup (canned, drained and rinsed)
  • Fresh parsley - 2 tablespoons, chopped
  • Lemon juice - 1 tablespoon
  • Tahini - 2 tablespoons

Steps

  1. Preheat your oven to 200°C (400°F).
  2. Wash the Russet potatoes thoroughly and prick them several times with a fork.
  3. Rub the potatoes with olive oil and sprinkle with salt.
  4. Place the potatoes directly on the oven rack and bake for about 45-50 minutes, or until tender.
  5. While the potatoes are baking, prepare the filling: In a skillet over medium heat, add a tablespoon of olive oil.
  6. Add the diced red bell pepper, zucchini, and grated carrot to the skillet and sauté for about 5-7 minutes until slightly softened.
  7. Stir in the corn, green peas, and chickpeas, cooking for an additional 3-4 minutes until heated through.
  8. Remove the skillet from heat and stir in the chopped parsley, lemon juice, and tahini. Season with black pepper to taste.
  9. Once the potatoes are done, remove them from the oven and let them cool for a few minutes.
  10. Cut a slit down the center of each potato and gently fluff the insides with a fork.
  11. Fill the potatoes with the vegetable mixture, pressing down slightly to pack it in.
  12. Serve immediately, garnished with additional parsley if desired.
