- Large Russet potatoes - 2
- Olive oil - 2 tablespoons
- Salt - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Red bell pepper - 1/2, diced
- Zucchini - 1 small, diced
- Carrot - 1 medium, grated
- Corn - 1/2 cup (canned or frozen)
- Green peas - 1/2 cup (canned or frozen)
- Chickpeas - 1/2 cup (canned, drained and rinsed)
- Fresh parsley - 2 tablespoons, chopped
- Lemon juice - 1 tablespoon
- Tahini - 2 tablespoons
Steps
- Preheat your oven to 200°C (400°F).
- Wash the Russet potatoes thoroughly and prick them several times with a fork.
- Rub the potatoes with olive oil and sprinkle with salt.
- Place the potatoes directly on the oven rack and bake for about 45-50 minutes, or until tender.
- While the potatoes are baking, prepare the filling: In a skillet over medium heat, add a tablespoon of olive oil.
- Add the diced red bell pepper, zucchini, and grated carrot to the skillet and sauté for about 5-7 minutes until slightly softened.
- Stir in the corn, green peas, and chickpeas, cooking for an additional 3-4 minutes until heated through.
- Remove the skillet from heat and stir in the chopped parsley, lemon juice, and tahini. Season with black pepper to taste.
- Once the potatoes are done, remove them from the oven and let them cool for a few minutes.
- Cut a slit down the center of each potato and gently fluff the insides with a fork.
- Fill the potatoes with the vegetable mixture, pressing down slightly to pack it in.
- Serve immediately, garnished with additional parsley if desired.
