- Large baking potatoes - 2
- Canned tuna (in olive oil) - 150 grams
- Mayonnaise - 2 tablespoons
- Greek yogurt - 2 tablespoons
- Lemon juice - 1 tablespoon
- Green olives, sliced - 50 grams
- Cherry tomatoes, halved - 100 grams
- Cucumber, diced - 50 grams
- Salt - to taste
- Black pepper - to taste
- Fresh parsley, chopped - 2 tablespoons
Steps
- Preheat the oven to 200°C (400°F).
- Wash the baking potatoes thoroughly and prick them several times with a fork.
- Wrap each potato in aluminum foil and place them directly on the oven rack.
- Bake the potatoes for 45-50 minutes, or until they are tender when pierced with a fork.
- While the potatoes are baking, prepare the tuna filling by draining the canned tuna and placing it in a mixing bowl.
- Add mayonnaise, Greek yogurt, lemon juice, sliced green olives, halved cherry tomatoes, diced cucumber, salt, and black pepper to the bowl with tuna.
- Mix everything well until combined, then taste and adjust seasoning if necessary.
- Once the potatoes are done baking, remove them from the oven and allow them to cool for a few minutes.
- Carefully unwrap the foil and cut a slit down the center of each potato, gently fluffing the insides with a fork.
- Fill each potato with the prepared tuna mixture, and top with chopped parsley.
