Ingredients

  • Large baking potatoes - 2
  • Canned tuna (in olive oil) - 150 grams
  • Mayonnaise - 2 tablespoons
  • Greek yogurt - 2 tablespoons
  • Lemon juice - 1 tablespoon
  • Green olives, sliced - 50 grams
  • Cherry tomatoes, halved - 100 grams
  • Cucumber, diced - 50 grams
  • Salt - to taste
  • Black pepper - to taste
  • Fresh parsley, chopped - 2 tablespoons

Steps

  1. Preheat the oven to 200°C (400°F).
  2. Wash the baking potatoes thoroughly and prick them several times with a fork.
  3. Wrap each potato in aluminum foil and place them directly on the oven rack.
  4. Bake the potatoes for 45-50 minutes, or until they are tender when pierced with a fork.
  5. While the potatoes are baking, prepare the tuna filling by draining the canned tuna and placing it in a mixing bowl.
  6. Add mayonnaise, Greek yogurt, lemon juice, sliced green olives, halved cherry tomatoes, diced cucumber, salt, and black pepper to the bowl with tuna.
  7. Mix everything well until combined, then taste and adjust seasoning if necessary.
  8. Once the potatoes are done baking, remove them from the oven and allow them to cool for a few minutes.
  9. Carefully unwrap the foil and cut a slit down the center of each potato, gently fluffing the insides with a fork.
  10. Fill each potato with the prepared tuna mixture, and top with chopped parsley.
