Ingredients

  • large russet potatoes - 2
  • olive oil - 2 tablespoons
  • kosher salt - 1 teaspoon
  • ground beef (kosher) - 250 grams
  • black pepper - 1/2 teaspoon
  • garlic powder - 1/2 teaspoon
  • onion powder - 1/2 teaspoon
  • cheddar cheese (shredded) - 100 grams
  • sour cream - 50 grams
  • pickles (diced) - 50 grams
  • green onions (sliced) - 2 tablespoons
  • ketchup - 2 tablespoons
  • mayonnaise - 2 tablespoons
  • lettuce leaves - 2
  • tomato (sliced) - 1 medium
  • avocado (sliced) - 1 small

Steps

  1. Preheat the oven to 200°C (400°F).
  2. Wash and scrub the russet potatoes thoroughly, then dry them. Prick each potato several times with a fork, rub with olive oil and sprinkle with kosher salt.
  3. Place the potatoes directly on the oven rack and bake for 45-50 minutes, or until tender when pierced with a knife.
  4. While the potatoes are baking, prepare the burger patties. In a bowl, mix the ground beef with black pepper, garlic powder, and onion powder. Form into two equal-sized patties.
  5. Heat a skillet over medium-high heat and cook the burger patties for about 4-5 minutes on each side, or until they reach your desired doneness.
  6. Once the potatoes are done, remove them from the oven and let them cool slightly. Cut each potato in half lengthwise and scoop out some of the flesh to create space for toppings.
  7. Mash the scooped potato flesh with a fork and mix in the shredded cheddar cheese until melted and well combined.
  8. Fill each potato half with the cheesy mashed potato mixture, then place a burger patty on top of each filled potato.
  9. Top each burger with sour cream, diced pickles, sliced green onions, ketchup, mayonnaise, lettuce, tomato, and avocado.
