Ingredients

  • Large Russet potatoes - 2
  • Olive oil - 2 tablespoons
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Butter - 2 tablespoons
  • Grated mozzarella cheese - 100 grams
  • Sour cream - 100 grams
  • Cooked corn - 1/2 cup
  • Chopped pickles - 1/2 cup
  • Sliced black olives - 1/4 cup
  • Chopped fresh parsley - 2 tablespoons
  • Red pepper flakes - 1/2 teaspoon

Steps

  1. Preheat the oven to 200°C (400°F).
  2. Wash the potatoes thoroughly and pierce them several times with a fork.
  3. Rub the potatoes with olive oil, salt, and black pepper.
  4. Place the potatoes directly on the oven rack and bake for 45-50 minutes, or until tender.
  5. Once baked, remove the potatoes from the oven and let them cool slightly.
  6. Cut the potatoes lengthwise and scoop out some of the flesh into a bowl, leaving enough to maintain the skin's structure.
  7. Mash the scooped-out potato flesh with butter and grated mozzarella cheese until creamy.
  8. Return the mixture back into the potato skins and reassemble them.
  9. Top the stuffed potatoes with sour cream, cooked corn, chopped pickles, sliced black olives, chopped parsley, and red pepper flakes.
  10. Serve warm and enjoy your Kumpir with Toppings!
