Kumpir with Toppings
Kumpir is a deliciously stuffed baked potato originating from Turkey, featuring a fluffy interior and a crispy skin. This version is topped with a variety of flavorful ingredients, making it a satisfying and customizable meal.

Ingredients
- Large Russet potatoes - 2
- Olive oil - 2 tablespoons
- Salt - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Butter - 2 tablespoons
- Grated mozzarella cheese - 100 grams
- Sour cream - 100 grams
- Cooked corn - 1/2 cup
- Chopped pickles - 1/2 cup
- Sliced black olives - 1/4 cup
- Chopped fresh parsley - 2 tablespoons
- Red pepper flakes - 1/2 teaspoon
Steps
- Preheat the oven to 200°C (400°F).
- Wash the potatoes thoroughly and pierce them several times with a fork.
- Rub the potatoes with olive oil, salt, and black pepper.
- Place the potatoes directly on the oven rack and bake for 45-50 minutes, or until tender.
- Once baked, remove the potatoes from the oven and let them cool slightly.
- Cut the potatoes lengthwise and scoop out some of the flesh into a bowl, leaving enough to maintain the skin's structure.
- Mash the scooped-out potato flesh with butter and grated mozzarella cheese until creamy.
- Return the mixture back into the potato skins and reassemble them.
- Top the stuffed potatoes with sour cream, cooked corn, chopped pickles, sliced black olives, chopped parsley, and red pepper flakes.
