Ingredients

  • Large baking potatoes - 2
  • Kosher sausage (beef or turkey) - 200 grams
  • Olive oil - 2 tablespoons
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Paprika - 1/2 teaspoon
  • Cheddar cheese, shredded - 100 grams
  • Butter - 2 tablespoons
  • Sour cream - 4 tablespoons
  • Chopped fresh parsley - 2 tablespoons
  • Sliced cherry tomatoes - 100 grams
  • Sliced cucumbers - 100 grams
  • Pickles, sliced - 50 grams
  • Ketchup - 2 tablespoons
  • Mustard - 2 tablespoons

Steps

  1. Preheat the oven to 200°C (400°F).
  2. Wash the potatoes thoroughly, then pierce them several times with a fork. Rub with olive oil, salt, and black pepper, then wrap each potato in aluminum foil.
  3. Place the wrapped potatoes directly on the oven rack and bake for 45-50 minutes, or until tender when pierced with a fork.
  4. While the potatoes are baking, heat a skillet over medium heat. Cook the kosher sausage according to package instructions until browned and cooked through, about 8-10 minutes. Remove from heat and let cool slightly before slicing.
  5. Once the potatoes are done, carefully unwrap them and cut a slit down the center of each potato. Gently fluff the insides with a fork and mix in butter, cheddar cheese, and paprika.
  6. Top each potato with sliced sausage, sour cream, chopped parsley, cherry tomatoes, cucumbers, and pickles.
  7. Drizzle ketchup and mustard on top before serving.
