- Large baking potatoes - 2
- Kosher sausage (beef or turkey) - 200 grams
- Olive oil - 2 tablespoons
- Salt - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Paprika - 1/2 teaspoon
- Cheddar cheese, shredded - 100 grams
- Butter - 2 tablespoons
- Sour cream - 4 tablespoons
- Chopped fresh parsley - 2 tablespoons
- Sliced cherry tomatoes - 100 grams
- Sliced cucumbers - 100 grams
- Pickles, sliced - 50 grams
- Ketchup - 2 tablespoons
- Mustard - 2 tablespoons
Steps
- Preheat the oven to 200°C (400°F).
- Wash the potatoes thoroughly, then pierce them several times with a fork. Rub with olive oil, salt, and black pepper, then wrap each potato in aluminum foil.
- Place the wrapped potatoes directly on the oven rack and bake for 45-50 minutes, or until tender when pierced with a fork.
- While the potatoes are baking, heat a skillet over medium heat. Cook the kosher sausage according to package instructions until browned and cooked through, about 8-10 minutes. Remove from heat and let cool slightly before slicing.
- Once the potatoes are done, carefully unwrap them and cut a slit down the center of each potato. Gently fluff the insides with a fork and mix in butter, cheddar cheese, and paprika.
- Top each potato with sliced sausage, sour cream, chopped parsley, cherry tomatoes, cucumbers, and pickles.
- Drizzle ketchup and mustard on top before serving.
