Ingredients
- Cauliflower - 400 grams
- Sausage (Italian or breakfast) - 200 grams
- Olive oil - 1 tablespoon
- Butter - 30 grams
- Cheddar cheese (shredded) - 100 grams
- Sour cream - 60 grams
- Green onions (chopped) - 2 tablespoons
- Salt - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Paprika - 1/2 teaspoon
- Mixed bell peppers (diced) - 100 grams
Steps
- Preheat the oven to 200°C (400°F).
- Cut the cauliflower into florets and steam them until tender, about 10-15 minutes.
- While the cauliflower is cooking, heat olive oil in a pan over medium heat and cook the sausage until browned, about 5-7 minutes. Remove from heat and set aside.
- Once the cauliflower is tender, drain any excess water and transfer it to a mixing bowl.
- Add butter, salt, black pepper, and paprika to the cauliflower. Mash everything together until smooth and creamy.
- Stir in half of the cheddar cheese and sour cream into the mashed cauliflower.
- Spoon the cauliflower mixture into two serving bowls or plates.
- Top each serving with the cooked sausage, diced bell peppers, and the remaining cheddar cheese.
- Bake in the preheated oven for 10 minutes, or until the cheese is melted and bubbly.
- Remove from the oven, garnish with chopped green onions, and serve hot.
