Ingredients

  • Cauliflower - 400 grams
  • Sausage (Italian or breakfast) - 200 grams
  • Olive oil - 1 tablespoon
  • Butter - 30 grams
  • Cheddar cheese (shredded) - 100 grams
  • Sour cream - 60 grams
  • Green onions (chopped) - 2 tablespoons
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Paprika - 1/2 teaspoon
  • Mixed bell peppers (diced) - 100 grams

Steps

  1. Preheat the oven to 200°C (400°F).
  2. Cut the cauliflower into florets and steam them until tender, about 10-15 minutes.
  3. While the cauliflower is cooking, heat olive oil in a pan over medium heat and cook the sausage until browned, about 5-7 minutes. Remove from heat and set aside.
  4. Once the cauliflower is tender, drain any excess water and transfer it to a mixing bowl.
  5. Add butter, salt, black pepper, and paprika to the cauliflower. Mash everything together until smooth and creamy.
  6. Stir in half of the cheddar cheese and sour cream into the mashed cauliflower.
  7. Spoon the cauliflower mixture into two serving bowls or plates.
  8. Top each serving with the cooked sausage, diced bell peppers, and the remaining cheddar cheese.
  9. Bake in the preheated oven for 10 minutes, or until the cheese is melted and bubbly.
  10. Remove from the oven, garnish with chopped green onions, and serve hot.
