- large potatoes - 2
- red bell pepper - 1
- yellow bell pepper - 1
- olive oil - 2 tablespoons
- garlic powder - 1 teaspoon
- smoked paprika - 1 teaspoon
- salt - to taste
- black pepper - to taste
- fresh parsley - 2 tablespoons, chopped
- vegan yogurt - 4 tablespoons
- lemon juice - 1 tablespoon
Steps
- Preheat the oven to 200°C (400°F).
- Wash and dry the potatoes, then prick them several times with a fork.
- Wrap each potato in aluminum foil and place them directly on the oven rack. Bake for 45-50 minutes, or until tender.
- While the potatoes are baking, prepare the roasted peppers. Cut the red and yellow bell peppers in half and remove the seeds.
- Place the peppers cut-side down on a baking sheet. Drizzle with 1 tablespoon of olive oil and season with salt and black pepper.
- Roast the peppers in the oven for 20-25 minutes, until the skin is blistered and charred. Remove from the oven and let cool slightly.
- Once cool enough to handle, peel off the charred skin of the peppers and slice them into strips.
- In a small bowl, mix the vegan yogurt with lemon juice, garlic powder, smoked paprika, and a pinch of salt to create a sauce.
- Once the potatoes are done, carefully remove them from the oven and unwrap the foil.
- Cut a slit down the center of each potato and gently fluff the insides with a fork.
- Drizzle the remaining olive oil over the potatoes, then top with roasted pepper strips, the yogurt sauce, and chopped parsley.
