Ingredients

  • Large Russet potatoes - 2
  • Olive oil - 2 tablespoons
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Butter - 2 tablespoons (dairy-free if needed)
  • Cheddar cheese, grated - 100 grams
  • Kale, finely chopped - 50 grams
  • Corn kernels, cooked - 100 grams
  • Pickles, diced - 100 grams
  • Paprika - 1/2 teaspoon
  • Fresh parsley, chopped - 2 tablespoons

Steps

  1. Preheat the oven to 220°C (428°F).
  2. Wash and scrub the potatoes thoroughly, then prick them all over with a fork.
  3. Rub the potatoes with olive oil and sprinkle with salt.
  4. Place the potatoes directly on the oven rack and bake for about 45-50 minutes, or until tender.
  5. Remove the potatoes from the oven and let them cool for a few minutes until manageable.
  6. Once cool, cut each potato in half lengthwise and scoop out a small portion of the flesh into a bowl.
  7. Mash the scooped potato flesh with butter, black pepper, cheddar cheese, kale, corn, and paprika until well combined.
  8. Stuff the potato skins with the mixture, packing it in generously.
  9. Return the stuffed potatoes to the oven for another 10 minutes to melt the cheese and heat through.
  10. Serve hot, topped with diced pickles and garnished with fresh parsley.
