Ingredients

  • Large Russet potatoes - 2
  • Olive oil - 2 tablespoons
  • Salt - 1 teaspoon
  • Black olives (pitted and chopped) - 100 grams
  • Green olives (pitted and chopped) - 100 grams
  • Feta cheese (crumbled) - 50 grams
  • Butter - 2 tablespoons
  • Ground black pepper - ½ teaspoon
  • Paprika - ½ teaspoon
  • Chopped fresh parsley - 2 tablespoons

Steps

  1. Preheat your oven to 220°C (428°F).
  2. Wash the potatoes thoroughly and poke several holes in each potato with a fork to allow steam to escape.
  3. Rub the potatoes with olive oil and sprinkle with salt.
  4. Place the potatoes directly on the oven rack and bake for 45-50 minutes, or until tender when pierced with a fork.
  5. Once the potatoes are done, remove them from the oven and let them cool for a few minutes.
  6. Cut each potato lengthwise and gently scoop out a small portion of the flesh, placing it in a bowl.
  7. Add butter, ground black pepper, and paprika to the potato flesh in the bowl and mash until smooth.
  8. Spoon the mashed potato mixture back into the potato skins.
  9. Top each stuffed potato with chopped black olives, green olives, and crumbled feta cheese.
  10. Garnish with chopped fresh parsley and serve immediately.
