Ingredients
- Large Russet potatoes - 2
- Olive oil - 2 tablespoons
- Mushrooms (button or cremini) - 200 grams, sliced
- Onion - 1 medium, finely chopped
- Garlic - 2 cloves, minced
- Fresh parsley - 2 tablespoons, chopped
- Salt - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Paprika - 1/2 teaspoon
- Lemon juice - 1 tablespoon
- Sour cream (or dairy-free alternative) - 2 tablespoons (optional)
Steps
- Preheat the oven to 200°C (400°F).
- Wash the potatoes thoroughly and prick them several times with a fork. Rub them with olive oil and sprinkle with salt.
- Place the potatoes directly on the oven rack and bake for 45-60 minutes, or until they are tender when pierced with a fork.
- While the potatoes are baking, heat 1 tablespoon of olive oil in a skillet over medium heat. Add the chopped onion and sauté until translucent, about 3-4 minutes.
- Add the minced garlic and sliced mushrooms to the skillet. Cook for another 5-7 minutes until the mushrooms are browned and tender.
- Season the mushroom mixture with salt, black pepper, paprika, and lemon juice. Stir in the chopped parsley and remove from heat.
- Once the potatoes are done, carefully remove them from the oven and let them cool slightly. Cut each potato in half lengthwise and scoop out a bit of the flesh to create space for the filling.
- Mix the scooped potato flesh with the remaining olive oil and adjust seasoning if necessary. Then, fill each potato half with the mushroom mixture.
- Top with a dollop of sour cream if desired, sprinkle with additional parsley, and serve hot.
