Ingredients

  • Large Russet potatoes - 2
  • Olive oil - 2 tablespoons
  • Mushrooms (button or cremini) - 200 grams, sliced
  • Onion - 1 medium, finely chopped
  • Garlic - 2 cloves, minced
  • Fresh parsley - 2 tablespoons, chopped
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Paprika - 1/2 teaspoon
  • Lemon juice - 1 tablespoon
  • Sour cream (or dairy-free alternative) - 2 tablespoons (optional)

Steps

  1. Preheat the oven to 200°C (400°F).
  2. Wash the potatoes thoroughly and prick them several times with a fork. Rub them with olive oil and sprinkle with salt.
  3. Place the potatoes directly on the oven rack and bake for 45-60 minutes, or until they are tender when pierced with a fork.
  4. While the potatoes are baking, heat 1 tablespoon of olive oil in a skillet over medium heat. Add the chopped onion and sauté until translucent, about 3-4 minutes.
  5. Add the minced garlic and sliced mushrooms to the skillet. Cook for another 5-7 minutes until the mushrooms are browned and tender.
  6. Season the mushroom mixture with salt, black pepper, paprika, and lemon juice. Stir in the chopped parsley and remove from heat.
  7. Once the potatoes are done, carefully remove them from the oven and let them cool slightly. Cut each potato in half lengthwise and scoop out a bit of the flesh to create space for the filling.
  8. Mix the scooped potato flesh with the remaining olive oil and adjust seasoning if necessary. Then, fill each potato half with the mushroom mixture.
  9. Top with a dollop of sour cream if desired, sprinkle with additional parsley, and serve hot.
