Ingredients

  • Large potatoes - 2
  • Olive oil - 2 tablespoons
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Fresh parsley - 2 tablespoons, chopped
  • Fresh dill - 1 tablespoon, chopped
  • Fresh chives - 1 tablespoon, chopped
  • Lemon juice - 1 tablespoon
  • Cherry tomatoes - 100 grams, halved
  • Feta cheese - 50 grams, crumbled

Steps

  1. Preheat the oven to 200°C (400°F).
  2. Wash the potatoes thoroughly and pierce them several times with a fork.
  3. Rub the potatoes with olive oil, salt, and black pepper, then wrap them in aluminum foil.
  4. Bake the potatoes in the preheated oven for about 45-50 minutes or until they are tender when pierced with a fork.
  5. While the potatoes are baking, prepare the herb filling by combining the chopped parsley, dill, chives, and lemon juice in a bowl.
  6. Once the potatoes are done, remove them from the oven and carefully unwrap them.
  7. Cut a slit down the center of each potato and gently fluff the insides with a fork.
  8. Fill each potato with the herb mixture, followed by the halved cherry tomatoes and crumbled feta cheese.
  9. Serve warm, garnished with extra herbs if desired.
