- Large potatoes - 2
- Olive oil - 2 tablespoons
- Salt - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Fresh parsley - 2 tablespoons, chopped
- Fresh dill - 1 tablespoon, chopped
- Fresh chives - 1 tablespoon, chopped
- Lemon juice - 1 tablespoon
- Cherry tomatoes - 100 grams, halved
- Feta cheese - 50 grams, crumbled
Steps
- Preheat the oven to 200°C (400°F).
- Wash the potatoes thoroughly and pierce them several times with a fork.
- Rub the potatoes with olive oil, salt, and black pepper, then wrap them in aluminum foil.
- Bake the potatoes in the preheated oven for about 45-50 minutes or until they are tender when pierced with a fork.
- While the potatoes are baking, prepare the herb filling by combining the chopped parsley, dill, chives, and lemon juice in a bowl.
- Once the potatoes are done, remove them from the oven and carefully unwrap them.
- Cut a slit down the center of each potato and gently fluff the insides with a fork.
- Fill each potato with the herb mixture, followed by the halved cherry tomatoes and crumbled feta cheese.
- Serve warm, garnished with extra herbs if desired.
