Ingredients

  • Large baking potatoes - 2
  • Garlic - 4 cloves

  • Butter - 2 tablespoons
  • Salt - 1 teaspoon
  • Black pepper - ½ teaspoon
  • Sour cream - 100 grams
  • Chopped chives - 2 tablespoons
  • Grated cheese (e.g., mozzarella or cheddar) - 100 grams

Steps

  1. Preheat your oven to 220°C (428°F).
  2. Wash the baking potatoes thoroughly and prick them all over with a fork.
  3. Rub the potatoes with olive oil and sprinkle with salt.
  4. Place the potatoes directly on the oven rack and bake for about 45-50 minutes, or until they are tender when pierced with a fork.
  5. While the potatoes are baking, prepare the garlic mixture. Peel and finely chop the garlic cloves.
  6. In a small saucepan over low heat, melt the butter. Add the chopped garlic and sauté for 2-3 minutes until fragrant, being careful not to burn it.
  7. Remove the saucepan from the heat and stir in the sour cream, salt, black pepper, and chopped chives until well combined.
  8. Once the potatoes are done, remove them from the oven and let them cool for a few minutes.
  9. Cut each potato lengthwise down the center and gently fluff the insides with a fork.
  10. Spoon the garlic mixture into each potato, then top with grated cheese.
  11. Return the stuffed potatoes to the oven for an additional 5-10 minutes, or until the cheese is melted and bubbly.
