Ingredients

  • Large potatoes - 2
  • Olive oil - 2 tablespoons
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Butter - 2 tablespoons
  • Feta cheese - 100 grams, crumbled
  • Greek yogurt - 4 tablespoons
  • Cherry tomatoes - 100 grams, halved
  • Cucumber - 1/2, diced
  • Kalamata olives - 50 grams, sliced
  • Fresh parsley - 2 tablespoons, chopped
  • Paprika - 1/2 teaspoon

Steps

  1. Preheat the oven to 200°C (400°F).
  2. Scrub the potatoes under cold water and pat dry. Poke several holes in each potato with a fork.
  3. Rub the potatoes with olive oil, salt, and black pepper. Wrap each potato in aluminum foil.
  4. Place the wrapped potatoes on a baking sheet and bake in the preheated oven for about 45-50 minutes, or until tender when pierced with a fork.
  5. Once the potatoes are done, remove them from the oven and carefully unwrap the foil. Cut a slit down the center of each potato and gently fluff the insides with a fork.
  6. Add butter to each potato and mix until creamy.
  7. Fold in crumbled feta cheese and season with additional salt and pepper if needed.
  8. Top the potatoes with Greek yogurt, cherry tomatoes, cucumber, kalamata olives, and chopped parsley.
  9. Sprinkle paprika over the top for added flavor and serve immediately.
