- Large potatoes - 2
- Olive oil - 2 tablespoons
- Salt - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Butter - 2 tablespoons
- Feta cheese - 100 grams, crumbled
- Greek yogurt - 4 tablespoons
- Cherry tomatoes - 100 grams, halved
- Cucumber - 1/2, diced
- Kalamata olives - 50 grams, sliced
- Fresh parsley - 2 tablespoons, chopped
- Paprika - 1/2 teaspoon
Steps
- Preheat the oven to 200°C (400°F).
- Scrub the potatoes under cold water and pat dry. Poke several holes in each potato with a fork.
- Rub the potatoes with olive oil, salt, and black pepper. Wrap each potato in aluminum foil.
- Place the wrapped potatoes on a baking sheet and bake in the preheated oven for about 45-50 minutes, or until tender when pierced with a fork.
- Once the potatoes are done, remove them from the oven and carefully unwrap the foil. Cut a slit down the center of each potato and gently fluff the insides with a fork.
- Add butter to each potato and mix until creamy.
- Fold in crumbled feta cheese and season with additional salt and pepper if needed.
- Top the potatoes with Greek yogurt, cherry tomatoes, cucumber, kalamata olives, and chopped parsley.
- Sprinkle paprika over the top for added flavor and serve immediately.
