- Large Russet potatoes - 2
- Eggplant - 1 medium (approximately 200g)
- Olive oil - 2 tablespoons
- Onion - 1 small, finely chopped
- Garlic - 2 cloves, minced
- Tomato - 1 medium, diced
- Red bell pepper - 1, diced
- Salt - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Paprika - 1/2 teaspoon
- Fresh parsley - 2 tablespoons, chopped
- Feta cheese - 50g, crumbled
- Greek yogurt - 100g
Steps
- Preheat the oven to 200°C (400°F).
- Wash the potatoes thoroughly and poke several holes in each potato with a fork. Bake them in the preheated oven for 45-50 minutes, or until tender.
- While the potatoes are baking, prepare the eggplant filling. Cut the eggplant in half lengthwise and sprinkle with salt. Let it sit for 15 minutes to draw out moisture, then rinse and pat dry.
- In a skillet, heat the olive oil over medium heat. Add the chopped onion and garlic, and sauté until softened, about 3-4 minutes.
- Add the eggplant to the skillet and cook for another 5-7 minutes until it starts to soften.
- Stir in the diced tomato and red bell pepper, then season with salt, black pepper, and paprika. Cook for an additional 5 minutes until the vegetables are tender.
- Remove from heat and stir in the chopped parsley and crumbled feta cheese.
- Once the potatoes are cooked, carefully slice them open lengthwise and fluff the insides with a fork.
- Spoon the eggplant mixture generously into each potato, then top with a dollop of Greek yogurt before serving.
