Ingredients

  • Large Russet potatoes - 2
  • Large eggs - 2
  • Unsalted butter - 30 grams
  • Plain yogurt - 100 grams
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Paprika - 1/2 teaspoon
  • Chopped fresh parsley - 2 tablespoons
  • Grated cheese (e.g. mozzarella or feta) - 50 grams

Steps

  1. Preheat the oven to 220°C (428°F).
  2. Wash and scrub the potatoes thoroughly, then prick them with a fork a few times.
  3. Wrap each potato in aluminum foil and bake in the preheated oven for about 45-50 minutes, or until tender.
  4. While the potatoes are baking, prepare the egg filling. In a bowl, whisk together the eggs, yogurt, salt, black pepper, and paprika until smooth.
  5. Once the potatoes are cooked, remove them from the oven and unwrap them carefully.
  6. Cut each potato lengthwise down the middle and gently fluff the insides with a fork.
  7. Add the butter to each potato and mix it into the fluffy interior, then pour the egg mixture evenly into each potato.
  8. Sprinkle the grated cheese over the top of the egg mixture.
  9. Return the stuffed potatoes to the oven and bake for an additional 10-15 minutes, or until the eggs are set and the cheese is melted.
  10. Remove from the oven, garnish with chopped parsley, and serve hot.
