Ingredients

  • Large baking potatoes - 2
  • Cooked corn kernels - 150 grams
  • Butter - 30 grams
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Cheddar cheese, grated - 100 grams
  • Sour cream - 100 grams
  • Chopped green onions - 2 tablespoons
  • Olive oil - 1 tablespoon

Steps

  1. Preheat your oven to 200°C (400°F).
  2. Scrub the potatoes under cold water and pat them dry. Prick each potato several times with a fork.
  3. Rub the potatoes with olive oil and sprinkle with salt. Place them directly on the oven rack and bake for 45-50 minutes, or until tender when pierced with a knife.
  4. While the potatoes are baking, prepare the corn topping by mixing the cooked corn kernels, chopped green onions, and a pinch of salt and pepper in a bowl.
  5. Once the potatoes are done, remove them from the oven and let them cool for a few minutes. Cut a slit down the center of each potato and gently squeeze the ends to open them up.
  6. Add butter, grated cheddar cheese, and sour cream into each potato. Then, top with the corn mixture.
