- Large baking potatoes - 2
- Cooked corn kernels - 150 grams
- Butter - 30 grams
- Salt - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Cheddar cheese, grated - 100 grams
- Sour cream - 100 grams
- Chopped green onions - 2 tablespoons
- Olive oil - 1 tablespoon
Steps
- Preheat your oven to 200°C (400°F).
- Scrub the potatoes under cold water and pat them dry. Prick each potato several times with a fork.
- Rub the potatoes with olive oil and sprinkle with salt. Place them directly on the oven rack and bake for 45-50 minutes, or until tender when pierced with a knife.
- While the potatoes are baking, prepare the corn topping by mixing the cooked corn kernels, chopped green onions, and a pinch of salt and pepper in a bowl.
- Once the potatoes are done, remove them from the oven and let them cool for a few minutes. Cut a slit down the center of each potato and gently squeeze the ends to open them up.
- Add butter, grated cheddar cheese, and sour cream into each potato. Then, top with the corn mixture.
