Ingredients

  • Large potatoes - 2
  • Cooked chicken breast, shredded - 200 grams
  • Olive oil - 2 tablespoons
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Paprika - 1/2 teaspoon
  • Garlic powder - 1/2 teaspoon
  • Greek yogurt - 100 grams
  • Pickles, diced - 50 grams
  • Corn, canned - 100 grams
  • Green onions, sliced - 2 tablespoons
  • Ketchup - 2 tablespoons
  • Cheddar cheese, shredded - 50 grams

Steps

  1. Preheat your oven to 200°C (400°F).
  2. Wash the potatoes thoroughly and poke several holes in each potato with a fork.
  3. Rub the potatoes with olive oil and sprinkle with salt.
  4. Place the potatoes on a baking sheet and bake in the preheated oven for about 45-50 minutes, or until tender.
  5. While the potatoes are baking, prepare the chicken filling by mixing the shredded chicken with black pepper, paprika, garlic powder, and a tablespoon of olive oil in a bowl.
  6. In another bowl, combine Greek yogurt, diced pickles, corn, and sliced green onions. Mix well and set aside.
  7. Once the potatoes are done, remove them from the oven and let them cool for a few minutes.
  8. Slice each potato lengthwise and gently fluff the insides with a fork.
  9. Fill each potato with the seasoned chicken mixture, then top with the yogurt mixture.
  10. Finish by adding a drizzle of ketchup and a sprinkle of shredded cheddar cheese on top.
