- Large potatoes - 2
- Cooked chicken breast, shredded - 200 grams

- Paprika - 1/2 teaspoon
- Garlic powder - 1/2 teaspoon
- Greek yogurt - 100 grams
- Pickles, diced - 50 grams
- Corn, canned - 100 grams
- Green onions, sliced - 2 tablespoons
- Ketchup - 2 tablespoons
- Cheddar cheese, shredded - 50 grams
Steps
- Preheat your oven to 200°C (400°F).
- Wash the potatoes thoroughly and poke several holes in each potato with a fork.
- Rub the potatoes with olive oil and sprinkle with salt.
- Place the potatoes on a baking sheet and bake in the preheated oven for about 45-50 minutes, or until tender.
- While the potatoes are baking, prepare the chicken filling by mixing the shredded chicken with black pepper, paprika, garlic powder, and a tablespoon of olive oil in a bowl.
- In another bowl, combine Greek yogurt, diced pickles, corn, and sliced green onions. Mix well and set aside.
- Once the potatoes are done, remove them from the oven and let them cool for a few minutes.
- Slice each potato lengthwise and gently fluff the insides with a fork.
- Fill each potato with the seasoned chicken mixture, then top with the yogurt mixture.
- Finish by adding a drizzle of ketchup and a sprinkle of shredded cheddar cheese on top.
