Ingredients

  • Large zucchini - 2
  • Cream cheese - 100 grams
  • Mozzarella cheese, shredded - 100 grams
  • Butter - 30 grams
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Garlic powder - 1/2 teaspoon
  • Chives, chopped - 2 tablespoons
  • Olive oil - 1 tablespoon

Steps

  1. Preheat the oven to 200°C (400°F).
  2. Wash the zucchinis and slice them in half lengthwise. Scoop out the insides to create a cavity, leaving a thin layer of flesh.
  3. Brush the zucchini halves with olive oil and season with salt and pepper.
  4. Place the zucchini halves on a baking sheet and bake in the preheated oven for 20 minutes until tender.
  5. In a mixing bowl, combine the scooped zucchini flesh, cream cheese, mozzarella cheese, butter, garlic powder, and chopped chives. Mix until well combined.
  6. Remove the zucchini from the oven and fill the cavities with the cheese mixture.
  7. Return the stuffed zucchinis to the oven and bake for an additional 10-15 minutes, or until the cheese is bubbly and golden.
  8. Remove from the oven, allow to cool for a few minutes, and serve warm.
