- Large zucchini - 2

- Butter - 30 grams
- Salt - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Garlic powder - 1/2 teaspoon
- Chives, chopped - 2 tablespoons
- Olive oil - 1 tablespoon
Steps
- Preheat the oven to 200°C (400°F).
- Wash the zucchinis and slice them in half lengthwise. Scoop out the insides to create a cavity, leaving a thin layer of flesh.
- Brush the zucchini halves with olive oil and season with salt and pepper.
- Place the zucchini halves on a baking sheet and bake in the preheated oven for 20 minutes until tender.
- In a mixing bowl, combine the scooped zucchini flesh, cream cheese, mozzarella cheese, butter, garlic powder, and chopped chives. Mix until well combined.
- Remove the zucchini from the oven and fill the cavities with the cheese mixture.
- Return the stuffed zucchinis to the oven and bake for an additional 10-15 minutes, or until the cheese is bubbly and golden.
- Remove from the oven, allow to cool for a few minutes, and serve warm.
