- Large Russet potatoes - 2
- Ground beef - 200 grams
- Onion - 1 medium, finely chopped
- Garlic - 2 cloves, minced
- Tomato paste - 1 tablespoon
- Olive oil - 1 tablespoon
- Salt - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Paprika - 1/2 teaspoon
- Cumin - 1/4 teaspoon
- Green bell pepper - 1 small, diced
- Red bell pepper - 1 small, diced
- Fresh parsley - 2 tablespoons, chopped
- Butter - 30 grams
- Cheese (mozzarella or cheddar) - 100 grams, shredded
Steps
- Preheat the oven to 200°C (400°F).
- Wash the Russet potatoes thoroughly and pierce them with a fork several times. Wrap each potato in aluminum foil and bake in the preheated oven for 45-50 minutes, or until tender.
- While the potatoes are baking, heat the olive oil in a pan over medium heat. Add the chopped onion and minced garlic, sautéing until the onion is translucent.
- Add the ground beef to the pan and cook until browned. Stir in the tomato paste, salt, black pepper, paprika, cumin, and diced bell peppers. Cook for an additional 5-7 minutes until the vegetables are just tender.
- Once the potatoes are done, remove them from the oven and carefully unwrap the foil. Cut each potato lengthwise, making sure not to cut all the way through.
- Scoop out a small portion of the potato flesh to create space for the filling, and mix this flesh with butter and shredded cheese in a bowl until creamy.
- Stuff the potato skins with the beef mixture, then top with the creamy potato and cheese mixture. Sprinkle additional cheese on top if desired.
- Return the stuffed potatoes to the oven for an additional 10 minutes, or until the cheese is melted and bubbly.
- Garnish with chopped fresh parsley before serving.
