- Large Russet potatoes - 2
- Olive oil - 2 tablespoons
- Salt - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Cooked chickpeas - 1 cup
- Vegan mayonnaise - 3 tablespoons
- Smoked paprika - 1 teaspoon
- Chopped fresh parsley - 2 tablespoons
- Sliced green onions - 2 tablespoons
- Diced cucumber - 1/2 cup
- Chopped tomatoes - 1/2 cup
- Pickled jalapeños - 2 tablespoons (optional)
- Lemon juice - 1 tablespoon
Steps
- Preheat the oven to 200°C (400°F).
- Wash and scrub the Russet potatoes thoroughly, then dry them.
- Prick the potatoes with a fork several times to allow steam to escape during baking.
- Rub the potatoes with olive oil and sprinkle with salt.
- Place the potatoes directly on the oven rack and bake for about 45-50 minutes, or until they are tender when pierced with a fork.
- While the potatoes are baking, prepare the filling: In a bowl, mix the cooked chickpeas, vegan mayonnaise, smoked paprika, chopped parsley, chopped tomatoes, diced cucumber, green onions, and lemon juice. Season with black pepper to taste.
- Once the potatoes are done, remove them from the oven and allow them to cool for a few minutes.
- Cut a slit down the center of each potato and gently fluff the insides with a fork.
- Spoon the chickpea mixture generously into each potato.
- Top with pickled jalapeños if desired and serve immediately.
