Ingredients

  • Large Russet potatoes - 2
  • Olive oil - 2 tablespoons
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Cooked chickpeas - 1 cup
  • Vegan mayonnaise - 3 tablespoons
  • Smoked paprika - 1 teaspoon
  • Chopped fresh parsley - 2 tablespoons
  • Sliced green onions - 2 tablespoons
  • Diced cucumber - 1/2 cup
  • Chopped tomatoes - 1/2 cup
  • Pickled jalapeños - 2 tablespoons (optional)
  • Lemon juice - 1 tablespoon

Steps

  1. Preheat the oven to 200°C (400°F).
  2. Wash and scrub the Russet potatoes thoroughly, then dry them.
  3. Prick the potatoes with a fork several times to allow steam to escape during baking.
  4. Rub the potatoes with olive oil and sprinkle with salt.
  5. Place the potatoes directly on the oven rack and bake for about 45-50 minutes, or until they are tender when pierced with a fork.
  6. While the potatoes are baking, prepare the filling: In a bowl, mix the cooked chickpeas, vegan mayonnaise, smoked paprika, chopped parsley, chopped tomatoes, diced cucumber, green onions, and lemon juice. Season with black pepper to taste.
  7. Once the potatoes are done, remove them from the oven and allow them to cool for a few minutes.
  8. Cut a slit down the center of each potato and gently fluff the insides with a fork.
  9. Spoon the chickpea mixture generously into each potato.
  10. Top with pickled jalapeños if desired and serve immediately.
