  • Large Russet potatoes - 2
  • Cooked chicken breast, shredded - 200 grams
  • Olive oil - 2 tablespoons
  • Butter - 1 tablespoon
  • Plain yogurt - 100 grams
  • Garlic powder - 1 teaspoon
  • Paprika - 1 teaspoon
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Chopped parsley - 2 tablespoons
  • Grated cheese (e.g., mozzarella or cheddar) - 50 grams
  • Corn kernels (canned or frozen) - 50 grams
  • Pickles, chopped - 50 grams

Steps

  1. Preheat your oven to 200°C (400°F).
  2. Wash the potatoes thoroughly and prick them with a fork several times. Coat them with olive oil and sprinkle with salt, then wrap each potato in aluminum foil.
  3. Place the wrapped potatoes directly on the oven rack and bake for about 45-50 minutes, or until they are tender when pierced with a fork.
  4. While the potatoes are baking, prepare the chicken filling. In a bowl, mix the shredded chicken with butter, garlic powder, paprika, black pepper, and chopped parsley. Stir to combine well.
  5. Once the potatoes are cooked, remove them from the oven and unwrap. Let them cool for a few minutes, then slice them open lengthwise and fluff the insides with a fork.
  6. Spoon the chicken mixture into each potato, followed by a dollop of yogurt, corn kernels, chopped pickles, and a sprinkle of grated cheese.
  7. Return the stuffed potatoes to the oven for an additional 10 minutes until the cheese is melted and bubbly.
