Ingredients

  • 2 medium-sized russet potatoes
  • 200 grams boneless, skinless chicken breast
  • 1 tablespoon olive oil
  • 1 teaspoon paprika
  • 1 teaspoon garlic powder
  • Salt and pepper to taste
  • 50 grams Greek yogurt
  • 50 grams grated cucumber
  • 1 tablespoon lemon juice
  • 2 whole wheat burger buns
  • 50 grams cherry tomatoes, halved
  • 50 grams arugula or lettuce

Steps

  1. Preheat the oven to 200°C (400°F).
  2. Wash and scrub the potatoes thoroughly, then poke holes in them with a fork. Place them on a baking tray and bake for 40-45 minutes until tender.
  3. While the potatoes are baking, season the chicken breast with olive oil, paprika, garlic powder, salt, and pepper. Grill or pan-cook the chicken over medium heat for 6-7 minutes on each side until fully cooked and no longer pink in the center.
  4. Remove the chicken from the heat and let it rest for a few minutes before slicing it into thin strips.
  5. In a small bowl, mix the Greek yogurt, grated cucumber, and lemon juice to create a refreshing sauce.
  6. Once the potatoes are done, cut them in half lengthwise and gently scoop out some of the flesh to create space for the filling.
  7. In each potato half, layer the sliced chicken, a dollop of the yogurt sauce, halved cherry tomatoes, and a handful of arugula or lettuce.
  8. Serve the stuffed potatoes in whole wheat burger buns for a complete meal.
