- Gluten-free pizza base - 2 pieces (approx. 200g each)
- Cooked chicken breast, shredded - 200g
- Red bell pepper, diced - 1 medium
- Green bell pepper, diced - 1 medium
- Red onion, finely chopped - 1 small
- Cherry tomatoes, halved - 100g
- Mozzarella cheese, shredded - 150g
- Olive oil - 2 tablespoons
- Dried oregano - 1 teaspoon
- Salt - to taste
- Black pepper - to taste
- Fresh parsley, chopped - 2 tablespoons
Steps
- Preheat your oven to 200°C (400°F).
- In a bowl, combine the shredded chicken, diced red and green bell peppers, red onion, cherry tomatoes, olive oil, dried oregano, salt, and black pepper. Mix well to combine.
- Place the gluten-free pizza bases on a baking sheet.
- Divide the chicken and vegetable mixture evenly between the two pizza bases, spreading it out evenly.
- Top each pizza with shredded mozzarella cheese.
- Bake in the preheated oven for 15-20 minutes, or until the cheese is melted and bubbly.
- Remove from the oven and garnish with fresh parsley before serving.
