Ingredients

  • Gluten-free pizza base - 2 pieces (approx. 200g each)
  • Cooked chicken breast, shredded - 200g
  • Red bell pepper, diced - 1 medium
  • Green bell pepper, diced - 1 medium
  • Red onion, finely chopped - 1 small
  • Cherry tomatoes, halved - 100g
  • Mozzarella cheese, shredded - 150g
  • Olive oil - 2 tablespoons
  • Dried oregano - 1 teaspoon
  • Salt - to taste
  • Black pepper - to taste
  • Fresh parsley, chopped - 2 tablespoons

Steps

  1. Preheat your oven to 200°C (400°F).
  2. In a bowl, combine the shredded chicken, diced red and green bell peppers, red onion, cherry tomatoes, olive oil, dried oregano, salt, and black pepper. Mix well to combine.
  3. Place the gluten-free pizza bases on a baking sheet.
  4. Divide the chicken and vegetable mixture evenly between the two pizza bases, spreading it out evenly.
  5. Top each pizza with shredded mozzarella cheese.
  6. Bake in the preheated oven for 15-20 minutes, or until the cheese is melted and bubbly.
  7. Remove from the oven and garnish with fresh parsley before serving.
