Ingredients
- Large potatoes - 2
- Sucuk (Turkish sausage) - 100 grams, sliced
- Mozzarella cheese - 100 grams, shredded
- Feta cheese - 50 grams, crumbled
- Red bell pepper - 1, diced
- Green bell pepper - 1, diced
- Olive oil - 2 tablespoons
- Salt - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Chili flakes - 1/2 teaspoon (optional)
- Fresh parsley - 2 tablespoons, chopped (for garnish)
Steps
- Preheat your oven to 200°C (400°F).
- Wash the potatoes thoroughly and prick them with a fork several times. Wrap each potato in aluminum foil and place them directly on the oven rack.
- Bake the potatoes for about 45-50 minutes, or until they are tender when pierced with a knife.
- While the potatoes are baking, heat the olive oil in a skillet over medium heat. Add the sliced sucuk and cook for about 5-7 minutes until browned and crispy. Remove from heat.
- Once the potatoes are done, carefully unwrap them from the foil. Cut a lengthwise slit down the center of each potato, being careful not to cut all the way through.
- Gently fluff the inside of the potatoes with a fork, and season with salt, black pepper, and chili flakes (if using).
- Layer the cooked sucuk, diced red and green bell peppers, shredded mozzarella, and crumbled feta cheese inside the fluffed potatoes.
- Return the stuffed potatoes to the oven and bake for an additional 10-15 minutes, until the cheese is melted and bubbly.
- Remove from the oven, garnish with chopped parsley, and serve hot.
