- Sour cream - 4 tablespoons
- Chopped green onions - 2 tablespoons
- Chopped red bell pepper - 1/2 cup
- Chopped cucumber - 1/2 cup
- Corn (canned or cooked) - 1/2 cup
- Paprika - 1/2 teaspoon
- Lemon juice - 1 tablespoon
Steps
- Preheat the oven to 200 degrees Celsius (400 degrees Fahrenheit).
- Wash the potatoes thoroughly and prick them with a fork several times to allow steam to escape.
- Rub the potatoes with olive oil and sprinkle with salt and black pepper.
- Place the potatoes directly on the oven rack and bake for 45-50 minutes, or until they are tender when pierced with a fork.
- While the potatoes are baking, prepare the toppings by combining the chickpeas, grated cheese, chopped green onions, chopped red bell pepper, chopped cucumber, corn, paprika, and lemon juice in a mixing bowl.
- Once the potatoes are done, remove them from the oven and let them cool for a few minutes.
- Carefully slice the potatoes open lengthwise and fluff the insides with a fork.
