Steps
- Preheat the oven to 200°C (400°F).
- Cut the cauliflower into florets and steam until tender, about 10 minutes.
- In a food processor, pulse the steamed cauliflower until it resembles rice or a coarse mash. Spread the cauliflower mash evenly on a baking tray lined with parchment paper.
- In a skillet, heat 2 tablespoons of olive oil over medium heat. Add the chopped onion and garlic, sautéing until translucent, about 3-4 minutes.
- Add the ground lamb to the skillet, cooking until browned. Stir in the tomato paste, diced red bell pepper, zucchini, oregano, cumin, salt, and black pepper, cooking for another 5-7 minutes until the vegetables are tender.
- Spread the lamb mixture evenly over the cauliflower base on the baking tray.
- Bake in the preheated oven for 15-20 minutes until the edges are golden and crisp.
- Remove from the oven and sprinkle with crumbled feta cheese and chopped parsley before serving.
