Ingredients

  • Cauliflower - 1 medium head (about 600g)
  • Ground lamb - 200g
  • Olive oil - 2 tablespoons
  • Onion - 1 small, finely chopped
  • Garlic - 2 cloves, minced
  • Tomato paste - 2 tablespoons
  • Red bell pepper - 1 small, diced
  • Zucchini - 1 small, diced
  • Oregano - 1 teaspoon
  • Cumin - 1 teaspoon
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Feta cheese - 50g, crumbled
  • Parsley - 2 tablespoons, chopped

Steps

  1. Preheat the oven to 200°C (400°F).
  2. Cut the cauliflower into florets and steam until tender, about 10 minutes.
  3. In a food processor, pulse the steamed cauliflower until it resembles rice or a coarse mash. Spread the cauliflower mash evenly on a baking tray lined with parchment paper.
  4. In a skillet, heat 2 tablespoons of olive oil over medium heat. Add the chopped onion and garlic, sautéing until translucent, about 3-4 minutes.
  5. Add the ground lamb to the skillet, cooking until browned. Stir in the tomato paste, diced red bell pepper, zucchini, oregano, cumin, salt, and black pepper, cooking for another 5-7 minutes until the vegetables are tender.
  6. Spread the lamb mixture evenly over the cauliflower base on the baking tray.
  7. Bake in the preheated oven for 15-20 minutes until the edges are golden and crisp.
  8. Remove from the oven and sprinkle with crumbled feta cheese and chopped parsley before serving.
