Ingredients

  • large potatoes - 2
  • olive oil - 2 tablespoons
  • salt - 1 teaspoon
  • black pepper - 1/2 teaspoon
  • bell pepper (diced) - 1/2 cup
  • zucchini (diced) - 1/2 cup
  • carrot (grated) - 1/4 cup
  • corn (canned or frozen) - 1/2 cup
  • green onion (sliced) - 1/4 cup
  • fresh parsley (chopped) - 2 tablespoons
  • lemon juice - 1 tablespoon
  • feta cheese (crumbled) - 50 grams (optional)

Steps

  1. Preheat the oven to 200°C (400°F).
  2. Wash the potatoes thoroughly and prick them with a fork several times.
  3. Rub the potatoes with olive oil and sprinkle with salt.
  4. Place the potatoes directly on the oven rack and bake for about 45-50 minutes, or until tender when pierced with a fork.
  5. While the potatoes are baking, prepare the vegetable filling. In a skillet, heat 1 tablespoon of olive oil over medium heat.
  6. Add the diced bell pepper, zucchini, grated carrot, and corn to the skillet. Season with black pepper and sauté for about 5-7 minutes until the vegetables are soft.
  7. Remove the skillet from heat and stir in the sliced green onion, chopped parsley, and lemon juice. Mix well and set aside.
  8. Once the potatoes are done, remove them from the oven and let them cool for a few minutes.
  9. Slice each potato lengthwise and gently fluff the insides with a fork.
  10. Spoon the vegetable mixture into the potatoes, and if desired, sprinkle crumbled feta cheese on top.
  11. Serve immediately and enjoy your Kumpir Sebzeli!
