- large potatoes - 2
- olive oil - 2 tablespoons
- salt - 1 teaspoon
- black pepper - 1/2 teaspoon
- bell pepper (diced) - 1/2 cup
- zucchini (diced) - 1/2 cup
- carrot (grated) - 1/4 cup
- corn (canned or frozen) - 1/2 cup
- green onion (sliced) - 1/4 cup
- fresh parsley (chopped) - 2 tablespoons
- lemon juice - 1 tablespoon
- feta cheese (crumbled) - 50 grams (optional)
Steps
- Preheat the oven to 200°C (400°F).
- Wash the potatoes thoroughly and prick them with a fork several times.
- Rub the potatoes with olive oil and sprinkle with salt.
- Place the potatoes directly on the oven rack and bake for about 45-50 minutes, or until tender when pierced with a fork.
- While the potatoes are baking, prepare the vegetable filling. In a skillet, heat 1 tablespoon of olive oil over medium heat.
- Add the diced bell pepper, zucchini, grated carrot, and corn to the skillet. Season with black pepper and sauté for about 5-7 minutes until the vegetables are soft.
- Remove the skillet from heat and stir in the sliced green onion, chopped parsley, and lemon juice. Mix well and set aside.
- Once the potatoes are done, remove them from the oven and let them cool for a few minutes.
- Slice each potato lengthwise and gently fluff the insides with a fork.
- Spoon the vegetable mixture into the potatoes, and if desired, sprinkle crumbled feta cheese on top.
- Serve immediately and enjoy your Kumpir Sebzeli!
