Ingredients

  • Large baking potatoes - 2
  • Olive oil - 2 tablespoons
  • Red bell pepper - 1, diced
  • Green bell pepper - 1, diced
  • Zucchini - 1, diced
  • Mushrooms - 100 grams, sliced
  • Corn - 100 grams, canned or frozen
  • Black olives - 50 grams, sliced
  • Fresh parsley - 2 tablespoons, chopped
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Paprika - 1 teaspoon
  • Lemon juice - 1 tablespoon

Steps

  1. Preheat your oven to 200°C (400°F).
  2. Wash the potatoes thoroughly and prick them with a fork several times. Rub them with olive oil and sprinkle with salt.
  3. Place the potatoes directly on the oven rack and bake for 45-50 minutes, or until they are tender when pierced with a knife.
  4. While the potatoes are baking, heat a tablespoon of olive oil in a pan over medium heat. Add the diced red and green bell peppers, and sauté for 3-4 minutes until they soften.
  5. Add the diced zucchini and sliced mushrooms to the pan and cook for another 5-6 minutes until all the vegetables are tender.
  6. Stir in the corn, olives, salt, black pepper, paprika, and lemon juice. Cook for an additional 2-3 minutes to heat through. Remove from heat and stir in fresh parsley.
  7. Once the potatoes are done, remove them from the oven and let them cool for a few minutes. Cut each potato in half lengthwise and fluff the insides with a fork.
  8. Spoon the vegetable mixture generously into each potato half. Drizzle with a bit more olive oil if desired and serve warm.
