Ingredients

  • Large potatoes - 2
  • Olive oil - 2 tablespoons
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Cherry tomatoes - 150 grams, halved
  • Cucumber - 1 medium, diced
  • Red onion - 1 small, finely chopped
  • Bell pepper (any color) - 1 small, diced
  • Kalamata olives - 50 grams, pitted and sliced
  • Feta cheese - 100 grams, crumbled
  • Fresh parsley - 2 tablespoons, chopped
  • Lemon juice - 1 tablespoon

Steps

  1. Preheat your oven to 200°C (400°F).
  2. Wash the potatoes thoroughly and prick them with a fork several times.
  3. Rub the potatoes with olive oil, salt, and black pepper, then wrap them in aluminum foil.
  4. Place the wrapped potatoes on a baking sheet and roast in the oven for about 45 minutes, or until tender.
  5. While the potatoes are baking, prepare the salad ingredients: In a bowl, combine the cherry tomatoes, cucumber, red onion, bell pepper, olives, feta cheese, parsley, and lemon juice.
  6. Once the potatoes are done, remove them from the oven and let them cool slightly.
  7. Unwrap the potatoes and cut them in half lengthwise, scooping out some of the flesh to create space for the salad.
  8. Fill each potato half generously with the prepared vegetable salad.
  9. Serve immediately and enjoy your delicious Kumpir Salatası!
