Ingredients
- Large potatoes - 2
- Olive oil - 2 tablespoons
- Salt - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Cherry tomatoes - 150 grams, halved
- Cucumber - 1 medium, diced
- Red onion - 1 small, finely chopped
- Bell pepper (any color) - 1 small, diced
- Kalamata olives - 50 grams, pitted and sliced
- Feta cheese - 100 grams, crumbled
- Fresh parsley - 2 tablespoons, chopped
- Lemon juice - 1 tablespoon
Steps
- Preheat your oven to 200°C (400°F).
- Wash the potatoes thoroughly and prick them with a fork several times.
- Rub the potatoes with olive oil, salt, and black pepper, then wrap them in aluminum foil.
- Place the wrapped potatoes on a baking sheet and roast in the oven for about 45 minutes, or until tender.
- While the potatoes are baking, prepare the salad ingredients: In a bowl, combine the cherry tomatoes, cucumber, red onion, bell pepper, olives, feta cheese, parsley, and lemon juice.
- Once the potatoes are done, remove them from the oven and let them cool slightly.
- Unwrap the potatoes and cut them in half lengthwise, scooping out some of the flesh to create space for the salad.
- Fill each potato half generously with the prepared vegetable salad.
