- Large baking potatoes - 2

- Cherry tomatoes - 200 grams, halved
- Cucumber - 1 medium, diced
- Red onion - ¼, finely chopped
- Green bell pepper - 1, diced
- Kalamata olives - 50 grams, pitted and sliced
- Feta cheese - 100 grams, crumbled
- Fresh parsley - 2 tablespoons, chopped
- Lemon juice - 1 tablespoon
Steps
- Preheat the oven to 200°C (400°F).
- Wash the potatoes thoroughly and poke several holes in each potato with a fork.
- Rub the potatoes with olive oil and sprinkle with salt and black pepper.
- Place the potatoes directly on the oven rack and bake for about 45-50 minutes, or until tender.
- While the potatoes are baking, prepare the salad mix by combining cherry tomatoes, cucumber, red onion, green bell pepper, Kalamata olives, feta cheese, and parsley in a large bowl.
- Drizzle with lemon juice and toss gently to combine.
- Once the potatoes are baked, remove them from the oven and let them cool for a few minutes.
- Cut each potato in half lengthwise and gently fluff the insides with a fork.
- Top the fluffed potatoes with the prepared salad mix, dividing it evenly between the two halves of each potato.
