Ingredients

  • Large baking potatoes - 2
  • Olive oil - 2 tablespoons
  • Salt - 1 teaspoon
  • Black pepper - ½ teaspoon
  • Cherry tomatoes - 200 grams, halved
  • Cucumber - 1 medium, diced
  • Red onion - ¼, finely chopped
  • Green bell pepper - 1, diced
  • Kalamata olives - 50 grams, pitted and sliced
  • Feta cheese - 100 grams, crumbled
  • Fresh parsley - 2 tablespoons, chopped
  • Lemon juice - 1 tablespoon

Steps

  1. Preheat the oven to 200°C (400°F).
  2. Wash the potatoes thoroughly and poke several holes in each potato with a fork.
  3. Rub the potatoes with olive oil and sprinkle with salt and black pepper.
  4. Place the potatoes directly on the oven rack and bake for about 45-50 minutes, or until tender.
  5. While the potatoes are baking, prepare the salad mix by combining cherry tomatoes, cucumber, red onion, green bell pepper, Kalamata olives, feta cheese, and parsley in a large bowl.
  6. Drizzle with lemon juice and toss gently to combine.
  7. Once the potatoes are baked, remove them from the oven and let them cool for a few minutes.
  8. Cut each potato in half lengthwise and gently fluff the insides with a fork.
  9. Top the fluffed potatoes with the prepared salad mix, dividing it evenly between the two halves of each potato.
  10. Serve immediately and enjoy your Kumpir Salata!
