Ingredients

  • Large baking potatoes - 2
  • Olive oil - 2 tablespoons
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Smoked paprika - 1 teaspoon
  • Chickpeas (cooked or canned) - 1 cup
  • Nutritional yeast - 2 tablespoons
  • Vegan cheese (shredded) - 100 grams
  • Cherry tomatoes - 1 cup, halved
  • Cucumber - 1 small, diced
  • Red onion - 1/4, finely chopped
  • Fresh parsley - 1/4 cup, chopped
  • Lemon juice - 1 tablespoon
  • Olives (sliced) - 1/4 cup

Steps

  1. Preheat the oven to 200°C (400°F).
  2. Wash and scrub the potatoes thoroughly, then pierce them several times with a fork.
  3. Rub the potatoes with olive oil, salt, and black pepper, then place them directly on the oven rack.
  4. Bake the potatoes for 45-50 minutes or until they are soft and cooked through.
  5. While the potatoes are baking, prepare the filling: In a bowl, mash the chickpeas and mix with nutritional yeast, smoked paprika, and a pinch of salt and pepper.
  6. Once the potatoes are done, remove them from the oven and let them cool slightly before slicing them open lengthwise.
  7. Gently fluff the insides of the potatoes with a fork, then fill them with the chickpea mixture, followed by vegan cheese, cherry tomatoes, cucumber, red onion, and olives.
  8. Drizzle lemon juice over the top and garnish with fresh parsley.
  9. Return the filled potatoes to the oven for an additional 10 minutes to melt the cheese.
