- Large baking potatoes - 2
- Olive oil - 2 tablespoons
- Salt - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Smoked paprika - 1 teaspoon
- Chickpeas (cooked or canned) - 1 cup
- Nutritional yeast - 2 tablespoons
- Vegan cheese (shredded) - 100 grams
- Cherry tomatoes - 1 cup, halved
- Cucumber - 1 small, diced
- Red onion - 1/4, finely chopped
- Fresh parsley - 1/4 cup, chopped
- Lemon juice - 1 tablespoon
- Olives (sliced) - 1/4 cup
Steps
- Preheat the oven to 200°C (400°F).
- Wash and scrub the potatoes thoroughly, then pierce them several times with a fork.
- Rub the potatoes with olive oil, salt, and black pepper, then place them directly on the oven rack.
- Bake the potatoes for 45-50 minutes or until they are soft and cooked through.
- While the potatoes are baking, prepare the filling: In a bowl, mash the chickpeas and mix with nutritional yeast, smoked paprika, and a pinch of salt and pepper.
- Once the potatoes are done, remove them from the oven and let them cool slightly before slicing them open lengthwise.
- Gently fluff the insides of the potatoes with a fork, then fill them with the chickpea mixture, followed by vegan cheese, cherry tomatoes, cucumber, red onion, and olives.
- Drizzle lemon juice over the top and garnish with fresh parsley.
- Return the filled potatoes to the oven for an additional 10 minutes to melt the cheese.
