Ingredients

  • Basmati rice - 150 grams
  • Water - 300 ml
  • Olive oil - 2 tablespoons
  • Red bell pepper - 1, diced
  • Zucchini - 1, diced
  • Mushrooms - 100 grams, sliced
  • Onion - 1 small, finely chopped
  • Garlic - 2 cloves, minced
  • Tomato paste - 1 tablespoon
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Paprika - 1 teaspoon
  • Dried thyme - 1/2 teaspoon
  • Fresh parsley - 2 tablespoons, chopped

Steps

  1. Rinse the basmati rice under cold water until the water runs clear, then soak it in water for 15 minutes.
  2. In a medium saucepan, heat the olive oil over medium heat. Add the chopped onion and garlic, sautéing until they are translucent.
  3. Add the diced red bell pepper, zucchini, and sliced mushrooms to the saucepan. Cook for about 5-7 minutes until the vegetables are slightly tender.
  4. Stir in the tomato paste, salt, black pepper, paprika, and dried thyme. Cook for an additional 2 minutes, allowing the spices to meld with the vegetables.
  5. Drain the soaked rice and add it to the saucepan, stirring well to combine with the vegetable mixture.
  6. Pour in the 300 ml of water and bring to a boil. Once boiling, reduce the heat to low, cover, and let it simmer for 15 minutes or until the rice is cooked and the water is absorbed.
  7. Remove from heat and let it sit covered for an additional 5 minutes. Fluff the rice with a fork and stir in the fresh parsley before serving.
