- Basmati rice - 150 grams
- Water - 300 ml
- Olive oil - 2 tablespoons
- Red bell pepper - 1, diced
- Zucchini - 1, diced
- Mushrooms - 100 grams, sliced
- Onion - 1 small, finely chopped
- Garlic - 2 cloves, minced
- Tomato paste - 1 tablespoon
- Salt - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Paprika - 1 teaspoon
- Dried thyme - 1/2 teaspoon
- Fresh parsley - 2 tablespoons, chopped
Steps
- Rinse the basmati rice under cold water until the water runs clear, then soak it in water for 15 minutes.
- In a medium saucepan, heat the olive oil over medium heat. Add the chopped onion and garlic, sautéing until they are translucent.
- Add the diced red bell pepper, zucchini, and sliced mushrooms to the saucepan. Cook for about 5-7 minutes until the vegetables are slightly tender.
- Stir in the tomato paste, salt, black pepper, paprika, and dried thyme. Cook for an additional 2 minutes, allowing the spices to meld with the vegetables.
- Drain the soaked rice and add it to the saucepan, stirring well to combine with the vegetable mixture.
- Pour in the 300 ml of water and bring to a boil. Once boiling, reduce the heat to low, cover, and let it simmer for 15 minutes or until the rice is cooked and the water is absorbed.
- Remove from heat and let it sit covered for an additional 5 minutes. Fluff the rice with a fork and stir in the fresh parsley before serving.
