- Whole wheat pita bread - 2 pieces
- Zucchini - 100 grams, diced
- Red bell pepper - 100 grams, diced
- Mushrooms - 100 grams, sliced
- Red onion - 50 grams, thinly sliced
- Olive oil - 2 tablespoons
- Garlic - 2 cloves, minced
- Dried oregano - 1 teaspoon
- Paprika - 1 teaspoon
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Spinach - 50 grams, chopped
- Tomato sauce - 100 grams
- Nutritional yeast - 2 tablespoons
- Fresh parsley - for garnish
Steps
- Preheat the oven to 200°C (400°F).
- In a large bowl, combine diced zucchini, red bell pepper, mushrooms, red onion, olive oil, minced garlic, oregano, paprika, salt, and black pepper. Toss well to coat the vegetables evenly.
- Spread the vegetable mixture onto a baking sheet lined with parchment paper and roast in the preheated oven for 15 minutes, or until tender and slightly caramelized.
- While the vegetables are roasting, prepare the pita bread by placing them on another baking sheet and spreading a layer of tomato sauce on each.
- Once the vegetables are done, remove them from the oven and stir in the chopped spinach until wilted.
- Evenly distribute the roasted vegetable mixture on top of the tomato sauce-covered pita breads.
- Sprinkle nutritional yeast over the vegetable topping for a cheesy flavor.
- Return the topped pita breads to the oven and bake for an additional 10 minutes, or until the edges are crispy.
- Remove from the oven, garnish with fresh parsley, and serve hot.
