Ingredients

  • Whole wheat pita bread - 2 pieces
  • Zucchini - 100 grams, diced
  • Red bell pepper - 100 grams, diced
  • Mushrooms - 100 grams, sliced
  • Red onion - 50 grams, thinly sliced
  • Olive oil - 2 tablespoons
  • Garlic - 2 cloves, minced
  • Dried oregano - 1 teaspoon
  • Paprika - 1 teaspoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Spinach - 50 grams, chopped
  • Tomato sauce - 100 grams
  • Nutritional yeast - 2 tablespoons
  • Fresh parsley - for garnish

Steps

  1. Preheat the oven to 200°C (400°F).
  2. In a large bowl, combine diced zucchini, red bell pepper, mushrooms, red onion, olive oil, minced garlic, oregano, paprika, salt, and black pepper. Toss well to coat the vegetables evenly.
  3. Spread the vegetable mixture onto a baking sheet lined with parchment paper and roast in the preheated oven for 15 minutes, or until tender and slightly caramelized.
  4. While the vegetables are roasting, prepare the pita bread by placing them on another baking sheet and spreading a layer of tomato sauce on each.
  5. Once the vegetables are done, remove them from the oven and stir in the chopped spinach until wilted.
  6. Evenly distribute the roasted vegetable mixture on top of the tomato sauce-covered pita breads.
  7. Sprinkle nutritional yeast over the vegetable topping for a cheesy flavor.
  8. Return the topped pita breads to the oven and bake for an additional 10 minutes, or until the edges are crispy.
  9. Remove from the oven, garnish with fresh parsley, and serve hot.
