- Large baking potatoes - 2

- Cream cheese - 100 grams
- Feta cheese - 100 grams, crumbled
- Mozzarella cheese - 100 grams, shredded
- Chopped parsley - 2 tablespoons
- Chili flakes - 1/2 teaspoon (optional)
Steps
- Preheat your oven to 200°C (400°F).
- Wash the baking potatoes thoroughly and prick them several times with a fork.
- Rub the potatoes with olive oil and sprinkle with salt.
- Place the potatoes directly on the oven rack and bake for about 45-50 minutes, or until tender.
- Once cooked, remove the potatoes from the oven and allow them to cool for a few minutes.
- Cut each potato in half lengthwise and gently scoop out some of the flesh, leaving a small border around the edges.
- In a mixing bowl, combine the scooped potato flesh, butter, cream cheese, feta cheese, mozzarella cheese, black pepper, and chili flakes (if using).
- Mix until well combined and creamy.
- Fill the potato skins with the cheese mixture and return them to the oven for an additional 10-15 minutes, or until the tops are golden and bubbly.
- Garnish with chopped parsley before serving.
