Ingredients

  • Large baking potatoes - 2
  • Olive oil - 2 tablespoons
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Butter - 2 tablespoons
  • Cream cheese - 100 grams
  • Feta cheese - 100 grams, crumbled
  • Mozzarella cheese - 100 grams, shredded
  • Chopped parsley - 2 tablespoons
  • Chili flakes - 1/2 teaspoon (optional)

Steps

  1. Preheat your oven to 200°C (400°F).
  2. Wash the baking potatoes thoroughly and prick them several times with a fork.
  3. Rub the potatoes with olive oil and sprinkle with salt.
  4. Place the potatoes directly on the oven rack and bake for about 45-50 minutes, or until tender.
  5. Once cooked, remove the potatoes from the oven and allow them to cool for a few minutes.
  6. Cut each potato in half lengthwise and gently scoop out some of the flesh, leaving a small border around the edges.
  7. In a mixing bowl, combine the scooped potato flesh, butter, cream cheese, feta cheese, mozzarella cheese, black pepper, and chili flakes (if using).
  8. Mix until well combined and creamy.
  9. Fill the potato skins with the cheese mixture and return them to the oven for an additional 10-15 minutes, or until the tops are golden and bubbly.
  10. Garnish with chopped parsley before serving.
