Ingredients

  • Large potatoes - 2
  • Olive oil - 2 tablespoons
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Mozzarella cheese - 100 grams, shredded
  • Feta cheese - 50 grams, crumbled
  • Bell pepper (red or green) - 1, diced
  • Black olives - 50 grams, sliced
  • Cherry tomatoes - 100 grams, halved
  • Fresh parsley - 2 tablespoons, chopped
  • Oregano - 1 teaspoon

Steps

  1. Preheat your oven to 200°C (400°F).
  2. Wash the potatoes thoroughly and pat them dry. Pierce each potato several times with a fork.
  3. Rub the potatoes with olive oil and sprinkle with salt. Place them directly on the oven rack and bake for about 45-50 minutes, or until tender.
  4. Once the potatoes are done, remove them from the oven and let them cool for a few minutes. Then, cut each potato in half lengthwise and scoop out a portion of the flesh, leaving a border to create a 'boat'.
  5. In a mixing bowl, combine the scooped-out potato flesh, mozzarella cheese, feta cheese, diced bell pepper, black olives, cherry tomatoes, black pepper, oregano, and chopped parsley. Mix well until all ingredients are combined.
  6. Fill each potato half with the cheese and vegetable mixture, pressing down gently to pack it in.
  7. Return the filled potato halves to the oven and bake for an additional 15 minutes, or until the cheese is melted and bubbly.
  8. Remove from the oven, garnish with extra parsley if desired, and serve hot.
