Ingredients

  • Large baking potatoes - 2
  • Olive oil - 2 tablespoons
  • Red bell pepper - 1, diced
  • Zucchini - 1, diced
  • Mushrooms - 150 grams, diced
  • Onion - 1 small, finely chopped
  • Garlic - 2 cloves, minced
  • Ground cumin - 1 teaspoon
  • Paprika - 1 teaspoon
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Fresh parsley - 2 tablespoons, chopped
  • Feta cheese - 50 grams, crumbled (optional)
  • Greek yogurt - 100 grams (for serving)
  • Lettuce leaves - 2 (for serving)

Steps

  1. Preheat the oven to 200°C (400°F).
  2. Wash the baking potatoes and prick them with a fork. Rub them with 1 tablespoon of olive oil and sprinkle with salt. Bake in the preheated oven for about 45-50 minutes, or until tender.
  3. While the potatoes are baking, heat the remaining tablespoon of olive oil in a skillet over medium heat. Add the chopped onion and garlic, sautéing until translucent.
  4. Add the diced red bell pepper, zucchini, and mushrooms to the skillet. Season with cumin, paprika, salt, and black pepper. Cook for about 8-10 minutes, stirring occasionally, until the vegetables are tender.
  5. Once the vegetables are cooked, stir in the chopped parsley and remove from heat.
  6. When the potatoes are done baking, remove them from the oven and let them cool slightly. Cut them open lengthwise and fluff the inside with a fork.
  7. Spoon the vegetable mixture into each potato, adding crumbled feta cheese on top if desired.
  8. Serve the stuffed potatoes with a dollop of Greek yogurt and lettuce leaves on the side.
