- Large baking potatoes - 2
- Olive oil - 2 tablespoons
- Red bell pepper - 1, diced
- Zucchini - 1, diced
- Mushrooms - 150 grams, diced
- Onion - 1 small, finely chopped
- Garlic - 2 cloves, minced
- Ground cumin - 1 teaspoon
- Paprika - 1 teaspoon
- Salt - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Fresh parsley - 2 tablespoons, chopped
- Feta cheese - 50 grams, crumbled (optional)
- Greek yogurt - 100 grams (for serving)
- Lettuce leaves - 2 (for serving)
Steps
- Preheat the oven to 200°C (400°F).
- Wash the baking potatoes and prick them with a fork. Rub them with 1 tablespoon of olive oil and sprinkle with salt. Bake in the preheated oven for about 45-50 minutes, or until tender.
- While the potatoes are baking, heat the remaining tablespoon of olive oil in a skillet over medium heat. Add the chopped onion and garlic, sautéing until translucent.
- Add the diced red bell pepper, zucchini, and mushrooms to the skillet. Season with cumin, paprika, salt, and black pepper. Cook for about 8-10 minutes, stirring occasionally, until the vegetables are tender.
- Once the vegetables are cooked, stir in the chopped parsley and remove from heat.
- When the potatoes are done baking, remove them from the oven and let them cool slightly. Cut them open lengthwise and fluff the inside with a fork.
- Spoon the vegetable mixture into each potato, adding crumbled feta cheese on top if desired.
- Serve the stuffed potatoes with a dollop of Greek yogurt and lettuce leaves on the side.
