- Large Russet potatoes - 2
- Olive oil - 2 tablespoons
- Salt - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Butter - 2 tablespoons
- Cheddar cheese, grated - 100 grams
- Sour cream - 100 grams
- Corn, canned or cooked - 100 grams
- Green olives, sliced - 50 grams
- Pickles, diced - 50 grams
- Red onion, finely chopped - 1/2 small
- Fresh parsley, chopped - 2 tablespoons
Steps
- Preheat the oven to 200°C (400°F).
- Wash the potatoes thoroughly and pierce them several times with a fork.
- Rub the potatoes with olive oil, salt, and black pepper.
- Wrap each potato in aluminum foil and place them on a baking tray.
- Bake in the preheated oven for 45-50 minutes, or until tender.
- Remove the potatoes from the oven and let them cool slightly before unwrapping.
- Once cool enough to handle, cut a slit down the center of each potato and gently squeeze the ends to open them up.
- Add butter inside each potato and mash the insides lightly with a fork.
- Top each potato with grated cheddar cheese, sour cream, corn, green olives, pickles, red onion, and fresh parsley as desired.
