Ingredients

  • Large Russet potatoes - 2
  • Olive oil - 2 tablespoons
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Butter - 2 tablespoons
  • Cheddar cheese, grated - 100 grams
  • Sour cream - 100 grams
  • Corn, canned or cooked - 100 grams
  • Green olives, sliced - 50 grams
  • Pickles, diced - 50 grams
  • Red onion, finely chopped - 1/2 small
  • Fresh parsley, chopped - 2 tablespoons

Steps

  1. Preheat the oven to 200°C (400°F).
  2. Wash the potatoes thoroughly and pierce them several times with a fork.
  3. Rub the potatoes with olive oil, salt, and black pepper.
  4. Wrap each potato in aluminum foil and place them on a baking tray.
  5. Bake in the preheated oven for 45-50 minutes, or until tender.
  6. Remove the potatoes from the oven and let them cool slightly before unwrapping.
  7. Once cool enough to handle, cut a slit down the center of each potato and gently squeeze the ends to open them up.
  8. Add butter inside each potato and mash the insides lightly with a fork.
  9. Top each potato with grated cheddar cheese, sour cream, corn, green olives, pickles, red onion, and fresh parsley as desired.
