- Large potatoes - 2
- Ground turkey or chicken - 200 grams
- Onion - 1 medium, finely chopped
- Garlic - 2 cloves, minced
- Tomato paste - 2 tablespoons
- Red bell pepper - 1, diced
- Olive oil - 2 tablespoons
- Salt - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Paprika - 1 teaspoon
- Dried oregano - 1 teaspoon
- Fresh parsley - 2 tablespoons, chopped (for garnish)
- Greek yogurt - 100 grams (for serving)
Steps
- Preheat your oven to 200°C (400°F).
- Wash the potatoes thoroughly, then prick them several times with a fork. Wrap each potato in aluminum foil and bake in the preheated oven for about 40 minutes, or until tender.
- While the potatoes are baking, heat olive oil in a skillet over medium heat. Add chopped onion and minced garlic, and sauté until the onion is translucent.
- Add the ground turkey or chicken to the skillet. Cook until browned, breaking it up with a spoon, about 5-7 minutes.
- Stir in the diced red bell pepper, tomato paste, salt, black pepper, paprika, and oregano. Cook for another 5-10 minutes, allowing the flavors to meld together.
- Once the potatoes are done, remove them from the oven and carefully unwrap them. Slice each potato lengthwise and gently fluff the insides with a fork.
- Spoon the turkey or chicken mixture generously into each potato. Top with a dollop of Greek yogurt and sprinkle with fresh parsley before serving.
