Ingredients

  • Large potatoes - 2
  • Ground turkey or chicken - 200 grams
  • Onion - 1 medium, finely chopped
  • Garlic - 2 cloves, minced
  • Tomato paste - 2 tablespoons
  • Red bell pepper - 1, diced
  • Olive oil - 2 tablespoons
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Paprika - 1 teaspoon
  • Dried oregano - 1 teaspoon
  • Fresh parsley - 2 tablespoons, chopped (for garnish)
  • Greek yogurt - 100 grams (for serving)

Steps

  1. Preheat your oven to 200°C (400°F).
  2. Wash the potatoes thoroughly, then prick them several times with a fork. Wrap each potato in aluminum foil and bake in the preheated oven for about 40 minutes, or until tender.
  3. While the potatoes are baking, heat olive oil in a skillet over medium heat. Add chopped onion and minced garlic, and sauté until the onion is translucent.
  4. Add the ground turkey or chicken to the skillet. Cook until browned, breaking it up with a spoon, about 5-7 minutes.
  5. Stir in the diced red bell pepper, tomato paste, salt, black pepper, paprika, and oregano. Cook for another 5-10 minutes, allowing the flavors to meld together.
  6. Once the potatoes are done, remove them from the oven and carefully unwrap them. Slice each potato lengthwise and gently fluff the insides with a fork.
  7. Spoon the turkey or chicken mixture generously into each potato. Top with a dollop of Greek yogurt and sprinkle with fresh parsley before serving.
