Ingredients

  • Pita bread - 2 pieces
  • Eggplant - 200 grams
  • Zucchini - 100 grams
  • Red bell pepper - 100 grams
  • Onion - 50 grams
  • Garlic - 2 cloves
  • Tomato - 100 grams
  • Olive oil - 2 tablespoons
  • Paprika - 1 teaspoon
  • Cumin - 1 teaspoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Fresh parsley - 2 tablespoons, chopped
  • Lemon - 1, juiced
  • Feta cheese - 50 grams, crumbled (optional)

Steps

  1. Preheat your oven to 200°C (390°F).
  2. Dice the eggplant, zucchini, red bell pepper, onion, and tomato into small cubes.
  3. In a skillet, heat the olive oil over medium heat and sauté the onion and garlic until fragrant.
  4. Add the eggplant and sauté for about 5 minutes until slightly softened.
  5. Stir in the zucchini and red bell pepper, cooking for another 5 minutes.
  6. Add the diced tomato, paprika, cumin, salt, and black pepper, and cook for an additional 5-7 minutes until the vegetables are tender.
  7. Remove from heat and stir in the chopped parsley and lemon juice.
  8. Place the pita breads on a baking sheet and spread the vegetable mixture evenly over each.
  9. If using, sprinkle crumbled feta cheese on top of the vegetable mixture.
  10. Bake in the preheated oven for about 10 minutes, until the edges of the pita are crispy.
  11. Remove from the oven and let cool for a minute before slicing and serving.
