- Eggplant - 200 grams
- Zucchini - 100 grams
- Red bell pepper - 100 grams
- Onion - 50 grams
- Garlic - 2 cloves
- Tomato - 100 grams
- Olive oil - 2 tablespoons
- Paprika - 1 teaspoon
- Cumin - 1 teaspoon
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Fresh parsley - 2 tablespoons, chopped
- Lemon - 1, juiced
- Feta cheese - 50 grams, crumbled (optional)
Steps
- Preheat your oven to 200°C (390°F).
- Dice the eggplant, zucchini, red bell pepper, onion, and tomato into small cubes.
- In a skillet, heat the olive oil over medium heat and sauté the onion and garlic until fragrant.
- Add the eggplant and sauté for about 5 minutes until slightly softened.
- Stir in the zucchini and red bell pepper, cooking for another 5 minutes.
- Add the diced tomato, paprika, cumin, salt, and black pepper, and cook for an additional 5-7 minutes until the vegetables are tender.
- Remove from heat and stir in the chopped parsley and lemon juice.
- Place the pita breads on a baking sheet and spread the vegetable mixture evenly over each.
- If using, sprinkle crumbled feta cheese on top of the vegetable mixture.
- Bake in the preheated oven for about 10 minutes, until the edges of the pita are crispy.
- Remove from the oven and let cool for a minute before slicing and serving.
