Ingredients
- large baking potatoes - 2
- olive oil - 2 tablespoons
- salt - 1 teaspoon
- pepper - 1/2 teaspoon
- red bell pepper - 1/2, diced
- green bell pepper - 1/2, diced
- mushrooms - 100 grams, sliced
- kalamata olives - 50 grams, pitted and chopped
- cherry tomatoes - 100 grams, halved
- fresh parsley - 2 tablespoons, chopped
- hummus - 4 tablespoons
- feta cheese - 50 grams, crumbled
Steps
- Preheat the oven to 200°C (400°F).
- Wash the baking potatoes thoroughly and dry them with a towel. Prick the skin of each potato several times with a fork.
- Rub the potatoes with olive oil and sprinkle with salt and pepper. Place them directly on the oven rack and bake for 45-50 minutes, or until tender.
- While the potatoes are baking, prepare the toppings. In a skillet, heat a tablespoon of olive oil over medium heat. Add the diced red and green bell peppers along with the sliced mushrooms. Sauté for about 5-7 minutes until softened.
- In a bowl, combine the sautéed vegetables with chopped kalamata olives, halved cherry tomatoes, and fresh parsley. Mix well and set aside.
- Once the potatoes are done, remove them from the oven and let them cool for a few minutes. Cut each potato lengthwise down the center and gently squeeze the ends to open them up.
- Fluff the inside of the potatoes with a fork, then spoon in 2 tablespoons of hummus into each potato.
- Top each potato with the vegetable mixture and sprinkle with crumbled feta cheese.
- Serve hot, garnished with extra parsley if desired.
