Ingredients

  • Large baking potatoes - 2
  • Olive oil - 2 tablespoons
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Garlic powder - 1/2 teaspoon
  • Grated cheese (mozzarella or cheddar) - 100 grams
  • Cherry tomatoes - 100 grams, halved
  • Cucumber - 1 small, diced
  • Red onion - 1/2 small, finely chopped
  • Kalamata olives - 50 grams, sliced
  • Fresh parsley - 2 tablespoons, chopped
  • Hummus - 4 tablespoons
  • Yogurt (optional) - 2 tablespoons

Steps

  1. Preheat the oven to 200°C (400°F).
  2. Wash the baking potatoes thoroughly and pat them dry. Prick the potatoes several times with a fork, then rub them with olive oil, salt, and black pepper.
  3. Place the potatoes directly on the oven rack and bake for about 45-50 minutes, or until they are tender when pierced with a fork.
  4. While the potatoes are baking, prepare the toppings: In a bowl, mix the halved cherry tomatoes, diced cucumber, chopped red onion, sliced olives, and parsley. Set aside.
  5. Once the potatoes are done, remove them from the oven and let them cool for a few minutes. Slice each potato down the middle, being careful not to cut all the way through.
  6. Fluff the insides of the potatoes with a fork and sprinkle the garlic powder over them. Add the grated cheese and allow it to melt slightly.
  7. Stuff each potato with a generous amount of hummus, followed by the mixed vegetable topping. If desired, add a dollop of yogurt on top.
  8. Serve immediately, garnished with additional parsley if desired.
