- Large baking potatoes - 2
- Ground chicken or turkey - 200 grams
- Red bell pepper - 1, diced
- Green bell pepper - 1, diced
- Onion - 1 small, chopped
- Garlic - 2 cloves, minced
- Tomato paste - 2 tablespoons
- Olive oil - 2 tablespoons
- Paprika - 1 teaspoon
- Cumin - 1 teaspoon
- Salt - to taste
- Black pepper - to taste
- Cheddar cheese - 100 grams, grated
- Greek yogurt - 100 grams
- Fresh parsley - for garnish
Steps
- Preheat the oven to 200°C (400°F).
- Wash the baking potatoes thoroughly and prick them with a fork several times. Bake in the preheated oven for 45-50 minutes, or until they are tender.
- While the potatoes are baking, heat olive oil in a skillet over medium heat. Add chopped onion and minced garlic, sauté until translucent.
- Add the ground chicken or turkey to the skillet and cook until browned, breaking it apart with a spatula.
- Stir in the diced red and green bell peppers, tomato paste, paprika, cumin, salt, and black pepper. Cook for another 5-7 minutes until the peppers are soft.
- Once the potatoes are done baking, remove them from the oven and let them cool slightly. Cut them open lengthwise and fluff the insides with a fork.
- Spoon the chicken and pepper mixture into each potato half, then top with grated cheddar cheese.
- Return the stuffed potatoes to the oven for an additional 5-10 minutes, until the cheese is melted and bubbly.
- Serve the Kumpir Kebap hot, drizzled with Greek yogurt and garnished with fresh parsley.
