- Large potatoes - 2
- Ground lamb or beef - 250 grams
- Red onion - 1 small, finely chopped

- Bell pepper - 1, diced
- Tomato - 1, diced

- Paprika - 1 teaspoon
- Cumin - 1 teaspoon
- Salt - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Fresh parsley - 2 tablespoons, chopped
- Yogurt - 100 grams
- Lemon juice - 1 tablespoon
- Cheddar cheese - 50 grams, grated (optional)
- Mixed salad greens - 2 cups
Steps
- Preheat the oven to 200°C (400°F).
- Wash the potatoes thoroughly and prick them with a fork to prevent bursting. Place them directly on the oven rack and bake for 45-50 minutes until tender.
- In a skillet, heat the olive oil over medium heat. Add the chopped onion and garlic, sautéing until softened, about 3-4 minutes.
- Add the ground lamb or beef to the skillet, breaking it apart with a spatula. Cook until browned, about 5-7 minutes.
- Stir in the diced bell pepper, tomato, paprika, cumin, salt, and black pepper. Cook for an additional 5 minutes until the vegetables are tender.
- Once the potatoes are done, remove them from the oven and let them cool slightly. Cut them open lengthwise and fluff the insides with a fork.
- Mix the yogurt with lemon juice and chopped parsley in a small bowl.
- Spoon the meat mixture generously into each potato, followed by a dollop of the yogurt sauce and a sprinkle of grated cheddar cheese if using.
- Top with mixed salad greens and serve immediately.
