Ingredients

  • Large potatoes - 2
  • Ground lamb or beef - 250 grams
  • Red onion - 1 small, finely chopped
  • Garlic - 2 cloves, minced
  • Bell pepper - 1, diced
  • Tomato - 1, diced
  • Olive oil - 2 tablespoons
  • Paprika - 1 teaspoon
  • Cumin - 1 teaspoon
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Fresh parsley - 2 tablespoons, chopped
  • Yogurt - 100 grams
  • Lemon juice - 1 tablespoon
  • Cheddar cheese - 50 grams, grated (optional)
  • Mixed salad greens - 2 cups

Steps

  1. Preheat the oven to 200°C (400°F).
  2. Wash the potatoes thoroughly and prick them with a fork to prevent bursting. Place them directly on the oven rack and bake for 45-50 minutes until tender.
  3. In a skillet, heat the olive oil over medium heat. Add the chopped onion and garlic, sautéing until softened, about 3-4 minutes.
  4. Add the ground lamb or beef to the skillet, breaking it apart with a spatula. Cook until browned, about 5-7 minutes.
  5. Stir in the diced bell pepper, tomato, paprika, cumin, salt, and black pepper. Cook for an additional 5 minutes until the vegetables are tender.
  6. Once the potatoes are done, remove them from the oven and let them cool slightly. Cut them open lengthwise and fluff the insides with a fork.
  7. Mix the yogurt with lemon juice and chopped parsley in a small bowl.
  8. Spoon the meat mixture generously into each potato, followed by a dollop of the yogurt sauce and a sprinkle of grated cheddar cheese if using.
  9. Top with mixed salad greens and serve immediately.
