- Large Russet potatoes - 2
- Ground chicken or turkey - 200 grams
- Olive oil - 2 tablespoons
- Red onion - 1 small, finely chopped
- Red bell pepper - 1, diced
- Zucchini - 1 small, diced
- Tomato paste - 2 tablespoons
- Paprika - 1 teaspoon
- Cumin - 1 teaspoon
- Salt - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Feta cheese - 50 grams, crumbled
- Fresh parsley - 2 tablespoons, chopped
- Yogurt - 100 grams, for serving
- Lemon wedges - 2, for serving
Steps
- Preheat your oven to 200°C (400°F).
- Wash the potatoes thoroughly and prick them with a fork. Wrap them in aluminum foil and bake for about 45-50 minutes, until tender.
- While the potatoes are baking, heat olive oil in a skillet over medium heat. Add the chopped red onion and sauté for 3-4 minutes until translucent.
- Add the ground chicken or turkey to the skillet and cook for 5-6 minutes until browned, breaking it apart with a spoon.
- Stir in the diced red bell pepper and zucchini. Cook for another 4-5 minutes until the vegetables are soft.
- Mix in the tomato paste, paprika, cumin, salt, and black pepper. Cook for an additional 2-3 minutes until well combined. Remove from heat.
- Once the potatoes are done, remove them from the oven and let them cool slightly. Cut each potato in half lengthwise and scoop out some of the flesh to create a boat.
- Mix the scooped potato flesh with the chicken mixture, crumbled feta cheese, and chopped parsley.
- Fill each potato half with the chicken and vegetable mixture, pressing it down lightly.
- Return the stuffed potatoes to the oven for an additional 10 minutes to heat through.
- Serve with a dollop of yogurt and lemon wedges on the side.
