Ingredients

  • Large Russet potatoes - 2
  • Ground chicken or turkey - 200 grams
  • Olive oil - 2 tablespoons
  • Red onion - 1 small, finely chopped
  • Red bell pepper - 1, diced
  • Zucchini - 1 small, diced
  • Tomato paste - 2 tablespoons
  • Paprika - 1 teaspoon
  • Cumin - 1 teaspoon
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Feta cheese - 50 grams, crumbled
  • Fresh parsley - 2 tablespoons, chopped
  • Yogurt - 100 grams, for serving
  • Lemon wedges - 2, for serving

Steps

  1. Preheat your oven to 200°C (400°F).
  2. Wash the potatoes thoroughly and prick them with a fork. Wrap them in aluminum foil and bake for about 45-50 minutes, until tender.
  3. While the potatoes are baking, heat olive oil in a skillet over medium heat. Add the chopped red onion and sauté for 3-4 minutes until translucent.
  4. Add the ground chicken or turkey to the skillet and cook for 5-6 minutes until browned, breaking it apart with a spoon.
  5. Stir in the diced red bell pepper and zucchini. Cook for another 4-5 minutes until the vegetables are soft.
  6. Mix in the tomato paste, paprika, cumin, salt, and black pepper. Cook for an additional 2-3 minutes until well combined. Remove from heat.
  7. Once the potatoes are done, remove them from the oven and let them cool slightly. Cut each potato in half lengthwise and scoop out some of the flesh to create a boat.
  8. Mix the scooped potato flesh with the chicken mixture, crumbled feta cheese, and chopped parsley.
  9. Fill each potato half with the chicken and vegetable mixture, pressing it down lightly.
  10. Return the stuffed potatoes to the oven for an additional 10 minutes to heat through.
  11. Serve with a dollop of yogurt and lemon wedges on the side.
