Ingredients

  • Large Russet potatoes - 2
  • Olive oil - 2 tablespoons
  • Ground lamb or beef - 200 grams
  • Red onion - 1 small, finely chopped
  • Garlic - 2 cloves, minced
  • Green bell pepper - 1, diced
  • Tomato - 1, diced
  • Cumin - 1 teaspoon
  • Paprika - 1 teaspoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Greek yogurt - 100 grams
  • Fresh parsley - 2 tablespoons, chopped
  • Lemon - 1, for garnish

Steps

  1. Preheat the oven to 200°C (400°F).
  2. Wash the potatoes thoroughly and poke several holes in them with a fork.
  3. Rub the potatoes with olive oil and sprinkle with salt, then wrap each in aluminum foil.
  4. Place the wrapped potatoes directly on the oven rack and bake for about 45 to 50 minutes, or until tender.
  5. While the potatoes are baking, heat a skillet over medium heat and add the ground lamb or beef.
  6. Cook the meat until browned, about 5-7 minutes, breaking it apart with a spatula.
  7. Add the chopped onion and garlic to the skillet, cooking until the onion becomes translucent, about 3-4 minutes.
  8. Stir in the diced green bell pepper and tomato, cooking for another 5 minutes.
  9. Sprinkle in the cumin, paprika, salt, and black pepper, mixing well to combine. Cook for an additional 2 minutes.
  10. Once the potatoes are done, remove them from the oven and carefully unwrap them.
  11. Cut each potato lengthwise and fluff the insides with a fork.
  12. Spoon the meat mixture generously on top of the fluffed potatoes.
  13. Top with a dollop of Greek yogurt, sprinkle with fresh parsley, and serve with lemon wedges on the side.
