Ingredients

  • Medium-sized zucchini - 2
  • Ground beef - 200 grams
  • Olive oil - 1 tablespoon
  • Onion - 1 small, finely chopped
  • Garlic - 2 cloves, minced
  • Bell pepper - 1 small, finely chopped
  • Tomato paste - 1 tablespoon
  • Dried oregano - 1 teaspoon
  • Salt - to taste
  • Black pepper - to taste
  • Mozzarella cheese - 100 grams, shredded
  • Fresh parsley - for garnish

Steps

  1. Preheat the oven to 200°C (390°F).
  2. Slice the zucchinis in half lengthwise and scoop out the insides to create a 'boat' shape. Place them on a baking tray.
  3. In a skillet, heat the olive oil over medium heat. Add the chopped onion and garlic, cooking until they are soft and translucent.
  4. Add the ground beef to the skillet, breaking it apart with a spatula. Cook until browned, about 5-7 minutes.
  5. Stir in the chopped bell pepper, tomato paste, oregano, salt, and black pepper. Cook for another 5 minutes until everything is well combined and heated through.
  6. Fill each zucchini boat with the beef mixture, packing it tightly.
  7. Top each filled zucchini with shredded mozzarella cheese.
  8. Bake in the preheated oven for about 20 minutes, or until the cheese is bubbly and golden.
  9. Remove from the oven and let cool for a few minutes. Garnish with fresh parsley before serving.
