- Medium-sized zucchini - 2
- Ground beef - 200 grams
- Olive oil - 1 tablespoon
- Onion - 1 small, finely chopped
- Garlic - 2 cloves, minced
- Bell pepper - 1 small, finely chopped
- Tomato paste - 1 tablespoon
- Dried oregano - 1 teaspoon
- Salt - to taste
- Black pepper - to taste
- Mozzarella cheese - 100 grams, shredded
- Fresh parsley - for garnish
Steps
- Preheat the oven to 200°C (390°F).
- Slice the zucchinis in half lengthwise and scoop out the insides to create a 'boat' shape. Place them on a baking tray.
- In a skillet, heat the olive oil over medium heat. Add the chopped onion and garlic, cooking until they are soft and translucent.
- Add the ground beef to the skillet, breaking it apart with a spatula. Cook until browned, about 5-7 minutes.
- Stir in the chopped bell pepper, tomato paste, oregano, salt, and black pepper. Cook for another 5 minutes until everything is well combined and heated through.
- Fill each zucchini boat with the beef mixture, packing it tightly.
- Top each filled zucchini with shredded mozzarella cheese.
- Bake in the preheated oven for about 20 minutes, or until the cheese is bubbly and golden.
- Remove from the oven and let cool for a few minutes. Garnish with fresh parsley before serving.
